Ingredients

  • 3~4 Karela / Bitter gourds
  • Salt to taste
  • 1/2 tsp Turmeric powder
  • 1 tsp Coriander powder
  • 1 tsp Garam masala
  • 1 tsp Red chili powder
  • 2~3 tsp Besan
  • Salt to taste
  • 1 tbsp Oil

Karele ki sabzi

Instructions

Step 1: Wash karli really good and cut them into thin slices.

Step 2: Remove the seeds from it and sprinkle salt, turmeric powder.

Step 3: Mix well and rest it for about 30-45 minutes.

Step 4: Add coriander powder, garam masala, red chili powder and mix everything well together.

Step 5: Add besan, salt and again mix well.

Step 6: Heat up a skillet on medium heat and spread oil on it.

Step 7: Place the karela slices in the oil and shallow fry the lower side on medium heat for about 2-3 minutes.

Step 8: When the slices are fried well from lower side flip them over and fry well from other side too.

Step 9: When the slices are shallow fried well from both sides take them off into a dish. Crispy karela is all ready.

Notes

  • You can wash karela now if you want to reduce the bitterness of it.
  • You can deep fry the slices if you want.
  • Or spread oil on the slices and line up the slices in microwave safe tray. You can bake the slices on convection mode on 180 Deg C for about 15 minutes from each side.
  • It remains crunchy and crispy for about 4-5 hours.
  • It is a good lunch box option. It goes well with rice as side dish.
