Traditional Agri Shevpa and Gorya

Shevpa and Gorya is one of the traditional and forgotten recipe. Shevpa which is nothing but Rice Noodles and Gorya which is Sabudana Kheer. This is Agri Recipe generally prepared during Shravan. It looks fantastic and tastes just awesome. This is served as naidedya for Ganapati, Gauri. You can try this recipe at home.

This is a traditional, authentic agri recipe that is specially made during month of Shravan. Shravan month is full of festivities and we get a variety of dishes in form of prasad or naivedya to the God. I am trying to revive this forgotten traditional recipe. Agri cuisine is popular for non veg and sea food. The special spices used in this cuisine are really special and made with traditional recipes those are passed from generation to generation.

Ingredients

For Gorya

  • 500 Country delight Cow milk
  • 1/2 cup soaked Sabudana
  • Slices Dry fruits (Almonds & Cashew nuts)
  • 1 tsp Country delight Ghee
  • 1/4 cup shredded fresh Coconut
  • 1/4 cup Gudh / Jaggery
  • Cardamom powder
  • A pinch of Nutmeg powder

For Shevpa

  • 1 1/2 cup Water
  • Salt to taste
  • 1 1/2 cup Rice flour

Instructions

For Gorya

Step 1: Heat up a pan on medium heat and add country delight cow milk.

Step 2: Bring the milk to boil.

Step 3: When milk begins to boil add soaked sabudana, dry fruits and cook on medium heat for about 4-5 minutes until sabudana turns translucent.

Step 4: When sabudana floats on the milk and turns translucent it means it is cooked well.

Step 5: dd country delight ghee, fresh coconut and cook well for another 3-4 minutes.

Step 6: Turn the gas to low heat and add gudh, cardamom powder, nutmeg powder and mix well.

Step 7: Cook everything together for just 2 minutes.

Step 8: Gorya or sabudana kheer is all ready.

For Shevpa

Step 1: For making shevapa or rice noodles heat up water in a pan.

Step 2: Add salt and mix well.

Step 3: Add rice flour and mix well quickly. No lumps of rice flour should be formed.

Step 4: Turn off the gas and keep the pan covered for about 10-15 minutes.

Step 5: Remove the lid and transfer the ukad into a dish.

Step 6: Knead the ukad really good until it comes together like dough and turns smooth.

Step 7: Take a small portion from the ukad and roll it.

Step 8: Transfer the roll into a shevai maker and roll shevai from it into a dish.

Step 9: Heat up water in steamer and transfer the shevai into it.

Step 10: Close the lid and steam shevapa on medium heat for about 7-8 minutes.

Step 11: Turn off the gas and take shevapa out.

Step 12: Shevapa is all ready.

Step 13: Serve shevapa in a dish along with gorya on it.

Notes

  • You can use a little water if needed for kneading ukad.
  • You can make 3 shevapa from above proportion.
  • You can make shevapa in idly patra too.

Shevpa is served with hot gorya. This recipe is made in the month of Shravan as naivedya. It tastes nice and is very easy to make.
