Ingredients

  • 1/2 cup Besan / Chickpea flour
  • 1/4 cup Rice flour
  • 1 tbsp finely chopped Onion
  • 1 tbsp finely chopped Tomato
  • 2~3 tsp finely chopped Coriander leaves
  • 1 finely chopped Green chili
  • 1/2 tsp Red chili powder
  • 1/4 tsp Turmeric powder
  • Salt to taste
  • A pinch of Ajwain / Carom seeds (Optional)

Instructions

  • In a bowl take besan.
  • Add rice flour, onion, tomato, coriander leaves, green chili, red chili powder, turmeric powder, and salt to taste.
  • Add ajwain and mix everything well together.
  • Adding ajwain is optional. You can skip it if you don’t like it.
  • Add a little water at a time and make a little runny batter.
  • No lumps of flour should be formed.
  • The batter should not be thick.
  • It should be a little thinner than the dosa batter.
  • The batter should have a pouring consistency.
  • Heat up a pan.
  • When the pan is enough hot add a little oil on the pan and spread it with a tissue.
  • Spread batter on the pan.
  • When the dhirda dries form one side spread a little oil in it and along the edges.
  • After roasting the dhirda for about 3-4 minutes from one side flip it over.
  • When the dihrda is roasted well from another side too take it off the pan into a plate.
  • Dhirda is already.
  • You can have dhirda as it is or with any chutney or with poli too.
  • You can make 4 small dhirdi from 1/2 cup besan and 1/4 cup rice flour.

Notes

  • Rice flour helps to give nice mesh to dhirda and also in making it light and crispy.
  • Ajwain gives a nice taste and also helps indigestion.
  • While making all dhirdi other than first always wipe out the oil on the pan with the help of tissue so that the lower side of dhirda gets nice and even color.
