Chamachamit Tawa Vangi Masala

Tava vange masala is a very easy and quick recipe. This can be a good lunch box option. You don’t need to make lot of preparations like blending masala or chopping onion etc. Just add the masala and fry well. It tastes just awesome and can be made with very few ingredients. Ingredients

  • Vangi
  • Oil
  • 1/2 tsp Mustard seeds
  • 1/2 tsp Cumin seeds
  • 1/4 tsp Hing
  • Mashed Garlic cloves
  • Kanda lasun masala
  • Red chili powder
  • Salt to taste
  • Water
  • 2~3 tsp roasted Peanut powder
  • 1/2 tsp Gudh (Optional)
  • Finely chopped Coriander leaves

Instructions

Step 1: Wash vangi really good and chop off the steam, remove thorns.

Step 2: Chop vangi into 4 pieces and cut across into 8 pieces.

Step 3: Transfer the pieces into water.

Step 4: Heat up oil in a pan and add mustard seeds.

Step 5: When mustard seeds pop up and cumin seeds and let them splutter.

Step 6: Add hing, garlic and fry for about a minute.

Step 7: Add chopped vangi and fry for about a minute.

Step 8: Add kanda lasun masala, red chili powder, salt and mix everything well together.

Step 9: Add water and mix well.

Step 10: Cover and cook on medium heat for about 5 minutes.

Step 11: Remove the kid and add a little more water.

Step 12: Mix well and again cover and cook for about 6-7 minutes.

Step 13: Remove the lid and check if vange is cooked.

Step 14: Add roasted peanut powder, gudh and mix well.

Step 15: Fry for another 3-4 minutes.

Step 16: Turn off the gas and tawa masala vange is all ready.

Step 17: Garnish with coriander leaves.

Notes

  • You can keep the thorns of the brinjal if you like.
  • You can add potato if you want. If you want to add potato then add it first in tadka, cook for about 10-12 minutes and then add vange.
  • You can skip gudh if you don’t want. Adding gudh is optional.
