Ingredients

  • 2 cup Maida
  • 1/4 cup hot Oil
  • 1 tsp Ajwain / Carom seeds
  • Salt to taste
  • 1/2 cup warm Water
  • 2 tsp Red chili powder
  • 1/4 tsp Black salt
  • 1/2 tsp Cumin powder
  • 4 tsp Dalda / Vanaspati ghee
  • 2 tsp Corn flour
  • Oil for frying

Tikhat chirote recipe

Instructions

Step 1: In a food processor, add maida, hot oil, carom seeds and salt and pulse it until oil is well combined with maida.

Step 2: Add warm water and blend to make semi soft dough.

Step 3: Cover and rest the dough for about 15-20 minutes.

Step 4: For making masala for chirote mix red chili powder, black salt and cumin powder well together in a bowl and masala is ready.

Step 5: For making sata for chirote mix dalda and corn flour well together in a bowl and beat it really good until it turns light and fluffy. Sata is ready.

Step 6: Knead the dough well once and take a portion from it.

Step 7: Make it smooth and even and roll out as thin chapati as possible.

Step 8: Spread the sata evenly on it.

Step 9: Lift one side and roll it into as tight roll as possible.

Step 10: Roll it well once more and cut small pieces from it.

Step 11: Transfer the pieces into a bowl and take one of it.

Step 12: Roll out a small disc from it. The side having layers should face upward while rolling. The chitota should not be thin.

Step 13: Heat up oil on medium heat in a pan and drop chirote into it.

Step 14: Fry the chirote well on low to medium heat until it gets golden color from both sides.

Step 15: When the chirota is fried well from lower side, flip it over and fry well from other side too.

Step 16: When chirota is fried well from both sides, take it out, drain excess oil and transfer it into a dish

Step 17: Sprinkle the masala on both sides of the chirote when they are still hot. Tikhat chirote are ready.

Notes

  • You can crumble the maida mixture together with hands too.
  • You can use rice flour or maida in place of corn flour for making sata.
  • you can store the chirote in an airtight container when they cool down completely.
  • They have shelf life of about a month.
