Ingredients

  • 1 cup Basmati Rice
  • 2 cups Water
  • Salt to taste
  • 3~4 tsp Ghee
  • 10~15 Almonds
  • 10~15 Cashew nuts
  • 6~7 Walnuts
  • 2~3 tsp black Raisins
  • 250 gm Paneer cubes
  • 1 tsp Ghee
  • 1 tsp Cumin seeds
  • 1 Cinnamon stick
  • 2~3 black Peppercorns
  • 2~3 Cloves
  • 2 green Cardamom
  • 1 Star anise
  • 1 tsp grated Ginger
  • Chopped Potato
  • Cauliflower florets
  • Sweet Corn
  • Chopped French beans
  • Chopped Green chili
  • Fresh Peas
  • Chopped Carrot
  • A little Salt
  • Water as needed

Shahi navratan pulav

Instructions

Step 1: Wash rice really good 3-4 times and soak it in water for 30 minutes.

Step 2: Transfer the soaked rice and water into a pan and add salt. Mix well.

Step 3: Cover and steam the rice on medium heat for 15 minutes until all the water is absorbed into the rice.

Step 4: Turn off the gas and let the rice be as it is for about 10 minutes.

Step 5: Remove the lid and loosen the rice carefully with the help of fork. Rice is cooked and ready.

Step 6: Transfer it into a dish to cool down.

Step 7: Heat up ghee in a pan and add almonds, cashew nuts and walnuts and fry well.

Step 8: When the dry nuts are almost fried add black raisins and fry well.

Step 9: Take the dry nuts out into a dish.

Step 10: In the same pan add paneer and fry it well on high heat until it gets golden color from all sides. Take the paneer out into a dish.

Step 11: In the same pan add ghee.

Step 12: When ghee is hot enough, add cumin seeds and let it splutter.

Step 13: Add cinnamon, black peppercorns, cloves, cardamom, star anise and ginger and fry well. 

Step 14: Add potato, cauliflower, sweet corn, French beans, fresh peas, green chili, carrot and fry everything well together.

Step 15: Add salt and mix well.

Step 16: Add water and mix well.

Step 17: Cover and steam the veggies on medium heat for about 7-8 minutes.

Step 18: Remove the lid and mix the veggies well once.

Step 19: Add the cooked rice and fried paneer and mix well carefully.

Step 20: Cover and steam the rice for just about 5 minutes.

Step 21: Remove the lid and mix well once. Navratan pulav is ready. Garnish it with fried nuts while serving.

Notes

  • You can add fried dry nuts along with rice if you want.
  • You can have it as it is or with some gravy sabji.
