Ingredients

Stuffing

  • 1 tbsp Oil
  • Garlic-Green chili paste (6~7 Garlic cloves & 2~3 Green chilies)
  • A pinch of Hing
  • Curry leaves
  • 1/4 tsp Turmeric powder
  • 3 medium size boiled & peeled Potatoes
  • Salt to taste
  • Finely chopped Coriander leaves

Coating

  • 1 cup Besan
  • 1/4 cup Rice flour
  • 1/4 tsp Turmeric powder
  • Salt to taste
  • A pinch of Baking soda
  • Water

Vada & Chura

  • Oil for frying

Green Chutney

  • 1 tbsp roasted Chana dal
  • 3~4 Garlic cloves
  • 2 Green chilies
  • Coriander leaves
  • Mint leaves
  • Black salt to taste
  • Salt to taste
  • A little Water

Sweet Tamarind Chutney

  • 1/2 cup Tamarind
  • 1/2 cup Gudh
  • Hot Water
  • Red chili powder
  • Black salt

Instructions

Stuffing

Step 1: Heat up oil in a pan and add garlic-green chili paste, hing, curry leaves. Fry everything together for about a minute.

Step 2: Turn off the gas and add turmeric powder. Mix well.

Step 3: Add potatoes and break them down with fork.

Step 4: Add salt, coriander leaves and mix well. Remove the curry leaves.

Step 5: Make vade from the mixture and keep them aside. You can decide the size and shape of the vada.

Coating

Step 7: Take besan in a bowl and add rice flour, turmeric powder, salt, baking soda.

Step 8: Mix well and add a little water at a time to make a little thick batter. The batter should have flowing consistency.

Vada & Chura

Step 9: Heat up oil in a pan on medium heat.

Step 10: Drop batter into hot oil for making chura and fry it well.

Step 11: When chura is fried well for about 3-4 minutes take it out, drain excess oil and transfer into a dish.

Step 12: For making vada, take the potato ball and coat it well with batter.

Step 13: Drop the vada in hot oil and fry well on medium heat for both sides.

Step 14: After frying vada well for about 2-3 minutes, flip it over and fry well from other side too.

Step 16: When vada is fried well from both sides, take it out, drain excess oil and transfer into a dish.

Green Chutney

Step 17: Take roasted chana dal, garlic cloves, green chilies in a blender and blend it into coarse paste.

Step 18: Add coriander leaves, mint leaves, rock salt, salt, water and blend it into fine paste. Transfer the chutney into a bowl.

Sweet tamarind Chutney

Step 19: Soak tamarind and gudh in hot water for about 30 minutes.

Step 20: Mash it well and strain the mixture through a strainer.

Step 21: Add red chili powder, rock salt and mix well. Sweet tamarind chutney is all ready.

Assembling Chura Vada Pav

Step 22: Slit ladi pav into half. Do not cut it throughout.

Step 23: Spread green chutney on one side of the ladi pav and sweet tamarind chutney on the other.

Step 24: Place vada and chura on the pav and close it up. Chura vada pav is all ready.

Notes

  • You can skip soda. You can add 1 tsp hot oil in place of soda.

This is a perfect recipe for a rainy evening. It looks nice and tastes simply superb. You can serve it with a hot cup of masala chai. The chutneys along with it add to the taste.
