We alsp will be preparing fresh sambar masala that tastes just awesome and gives nice flavour to sambar. You can try this recipe at home and drop a comment for me. Ingredients

  • 1 chopped Drum stick
  • 1/2 cup Tur dal
  • Water
  • 1 tsp Chana dal
  • 1 tsp Urad dal
  • 1 tsp Coriander seeds
  • 1/2 tsp Cumin seeds
  • 3 dry Red chilies
  • 1/4 tsp Fenugreek seeds
  • 1/4 cup fresh grated Coconut
  • 3~4 tsp Water
  • 2~3 tsp Oil
  • 1/2 tsp Mustard seeds
  • 1/2 tsp Cumin seeds
  • 1/4 tsp Hing
  • 6~8 Curry leaves
  • 1 medium size sliced Onion
  • A pinch of Fenugreek seeds (Optional)
  • 1/2 tsp Turmeric powder
  • 1/2 tsp Red chili powder
  • Chopped Bottle gourd
  • Chopped Carrot
  • 1 chopped Tomato
  • 1 tbsp Tamarind pulp
  • Salt to taste
  • Water
  • 1 tsp Oil
  • 1/2 tsp Mustard seeds
  • 6~7 Curry leaves
  • 3~4 dry Red chilies

Instructions

  • Take drum stick in a cooker pot and add water.
  • Wash tur dal 3-4 times well with water and add water.
  • Add water at the base of the cooker and place the dal at the base and drum sticks on it.
  • You can cook other veggies also along with drum sticks in cooker if you want.
  • Close the lid and cook on medium heat until 3 whistles.
  • For making sambar masala heat up a pan on medium heat and add chana dal, urad dal, coriander seeds, cumin seeds, dry red chilies.
  • Roast everything for just about 2-3 minutes.
  • The color of spices should not change but they should release nice aroma.
  • When spices begin to release aroma turn off the gas and add fenugreek seeds.
  • Transfer everything into a blender jar and blend it dry into fine powder.
  • Add fresh coconut and blend well once.
  • Add water and blend it into fine paste.
  • Sambar masala is all ready.
  • Heat up oil in a pan.
  • Add mustard seeds and let them pop up.
  • Add cumin seeds, hing, curry leaves, onion and fry for about 3-4 minutes.
  • Add fenugreek seeds, turmeric powder, red chili powder and mix well.
  • Adding fenugreek seeds is optional. You can skip it if you don’t like.
  • Add bottle gourd, carrot, tomato and mix well.
  • Udupi sambar contains potato. You can add peeled and chopped potato now if you like. Or you can boil potato along with drum stick and add.
  • Add water and cover the pan with lid.
  • Boil on medium heat until all veggies are nicely cooked for about 8-10 minutes.
  • Open the cooker and take the dal out.
  • Beat it really good until nice and smooth.
  • When the veggies are cooked well add cooked drum sticks, boiled dal, fresh blended masala and mix well.
  • Add tamarind pulp, salt and mix well.
  • Add water to adjust the consistency and simmer sambar on medium heat for about 8-10 minutes.
  • For tadka, heat up oil in a tadka pan.
  • Add mustard seeds, curry leaves, dry red chilies and mix well.
  • Add this tadka on sambar and mix well.
  • Udupi sambar is all ready.
