Ingredients

Chitranna

  • Cooked Rice
  • Salt to taste
  • Metkut as per taste
  • 1 tsp Oil
  • 1 tsp Mustard seeds
  • 1 tsp Cumin seeds
  • 1 tsp Urad dal
  • 1 tsp roasted Chana dal
  • 2 tsp raw Peanuts
  • Curry leaves
  • A pinch of Hing
  • Turmeric powder
  • Sandgi mirchi
  • Lemon juice
  • Finely chopped Coriander leaves

Tambuli

  • Grated fresh Coconut
  • 2~3 Garlic cloves
  • Butter milk
  • Salt to taste
  • Finely chopped Coriander leaves
  • 1 tsp Ghee
  • 1 tsp Cumin seeds
  • Chopped Green chili
  • Curry leaves
  • A pinch of Hing

Traditional chitranna and tambuli

Instructions

Chitranna

Step 1: Mix cooked rice, salt, metkut well together.

Step 2: Heat up oil in a pan and add mustard seeds.

Step 3: When mustard seeds pop up add cumin seeds and let it splutter.

Step 4: Add urad dal, roasted chana dal, peanuts and fry everything well together.

Step 5: Add curry leaves and fry well. Add hing, turmeric powder and mix well.

Step 6: Break sandgi mirchi into the tadka and fry well.

Step 7: Turn off the gas and add cooked rice.

Step 8: Add lemon juice, coriander leaves and mix everything well together. Chitranna is all ready.

Tambuli

Step 9: Blend fresh coconut, garlic, butter milk, salt together well in mixer and pour it out into a bowl.

Step 10: Add coriander leaves and mix well.

Step 11: Heat up ghee in a tadka pan and add cumin seeds, green chili, curry leaves, hing.

Step 12: Add this tadka into the butter milk and mix well. Tamali is all ready.

Notes

  • You can use chana dal in place of roasted chana dal.
  • You can use green chili in place of sandgi mirchi.
  • You can use grated raw mango in place of lemon juice.
  • You can skip garlic if you don’t like. In that case use cumin powder or cumin seeds according to your taste.
  • You can use curd in place of butter milk. In that case add water to adjust the consistency.
