Ingredients

  • 10~15 baby Potatoes
  • 2 tbsp Oil
  • 3 big sliced Onions
  • 1/2” chopped Ginger
  • 3~4 Garlic cloves
  • 2 sliced Tomatoes
  • 2 tbsp Oil
  • 1 tsp Kitchen king masala
  • 1 1/2 tsp Red chili powder
  • 1 tsp Besan (Optional)
  • Salt to taste
  • Hot Water

Masala aloo

Instructions

Step 1: Wash the potatoes well and dry them. Peel the potatoes.

Step 2: Heat up oil in a pan and drop potatoes into it.

Step 3: Shallow fry the potatoes well until they get nice golden color from all sides.

Step 4: Transfer the batter into a bowl and add onion, cabbage, coriander leaves.

Step 5: Take the potatoes out and prick them with the help of fork.

Step 6: In the same oil add onion, ginger and garlic and fry until onion gets nice golden color.

Step 7: Add tomato and fry together for another 4-5 minutes.

Step 8: When the mixture cools down and blend it into smooth puree in mixer. Avoid use of water while blending.

Step 9: Heat up oil in a pan and add the blended puree.

Step 10: Fry the masala well until oil begins to release from it and add kitchen king masala. Mix well.

Step 11: Add red chili powder and fry together for about a minute.

Step 12: Move the masala along the edge of the pan and add besan.

Step 13: Roast besan for about a minute and mix it with the masala.

Step 14: Add salt and mix well.

Step 15: Add hot water and mix well.

Step 16: When the mixture begins to boil add the shallow fried potatoes and mix well.

Step 17: Cover and steam dum aloo on medium heat for about 8-10 minutes. Dum aloo masala is ready.

Notes

  • You can use regular potatoes if you don’t have baby potatoes. In that case chop the potatoes into big chunks.
  • You can deep fry the potatoes if you want.
  • Adding besan is optional. You can skip it if you don’t want.
  • You can have it with roti or fulka or naan. It goes well with rice too.
