Ingredients

2 tsp Oil
1/2 tsp Mustard seeds
1/2 tsp Cumin seeds
Finely chopped Garlic
1/4 tsp Hing
7~8 Curry leaves
Finely chopped Onion
2 boiled, peeled and chopped Potatoes
Salt to taste
Finely chopped Coriander leaves

Instructions

Heat up oil in a pan.
Add mustard seeds and let them popup.
Add cumin seeds and let them splutter.
Add garlic, hing, curry leaves and mix well.
Fry for about 20-30 seconds.
Add onion and mix well.
Fry until onion gets nice golden brown color.
Add potatoes, red chili powder, salt and mix well.
Cover and cook on medium heat for about 5 minutes.
Add coriander leaves and mix well.
Aloo masala is all ready.
You can serve with chapatti
