Ingredients

Chinch-Gulachi Sweet Chutney

  • 1/2 cup Tamarind
  • 1/2 cup seedless Dates
  • 1/4 cup Gudh
  • Water as needed
  • 1 tsp Red chili powder
  • 1 tsp Cumin powder
  • 1/4 tsp Black salt
  • Salt to taste

Lasun Chutney

  • 10~12 dry Red chilies
  • Hot Water as needed
  • 2~3 Garlic cloves
  • Salt to taste
  • Black salt to taste
  • Lemon juice

Green Chutney

    • 4 tbsp roasted Chana dal
    • 2~3 chopped Green chilies
    • Salt to taste
    • Black salt to taste
    • 2~3 Garlic cloves
    • Coriander leaves
    • Water as needed

Instructions

Chinch-Gulachi Sweet Chutney

Step 1: Clean the tamarind and remove seeds from it. Remove the seeds from dates and chop them finely.

Step 2: Soak tamarind, dated and gudh in enough water for at least an hour.

Step 3: Mash the mixture well with hand and transfer it into a blender jar.

Step 4: Blend it into paste and strain it into a pan.

Step 5: Cook the mixture on medium heat for about 5 minutes.

Step 6: When it begins to boil add red chili powder, cumin powder, black salt, salt and mix well.

Step 7: Cook the mixture for another 2-3 minutes and chinch-gulachi sweet chutney is ready.

Step 8: Let it cool down completely and store it in glass jar.

Lasun Chutney

Step 9: Remove the stalks of dry red chilies and soak them in enough hot water for about 15 minutes.

Step 10: Transfer the soaked chilies along with the water into a blender jar and add garlic, salt, black salt and lemon juice.

Step 11: Blend it together into paste in mixer and lasun chutney is ready.

Green Chutney

Step 12: Blend roasted chana dal, green chilies, salt, black salt together first and add garlic cloves.

Step 13: Blend it well together.

Step 14: Add coriander leaves, water and blend everything well together. Green chutney is ready. 

Notes

  • You can use seedless dates too for sweet chutney.
  • You can increase the quantity of dates and skip gudh if you want in sweet chutney.
  • Sweet chutney remains good at room temperature for about 2-3 weeks and for about 1-2 months in freeze.
  • You can store lasun chutney in glass jar in freeze for about a week and in freezer for about 2-3 months.
  • You can blend garlic with all other dry ingredients in green chutney.
  • You can store green chutney in glass jar in freeze for about 1-2 days or you can store it in zip lock bag in freezer for about 2-3 months.
