Ingredients

  • 3 Eggs
  • 1~2 drops Vanilla essence
  • 1/4 cup Milk
  • 1 cup powdered Sugar
  • 50 gram soft Butter
  • 1 cup fine Rava / Suji
  • 1 1/2 cup finely shredded fresh Coconut
  • 1/2 tsp Baking powder
  • 1/4 tsp Salt
  • Cardamom powder

Slice cake recipe

Instructions

Step 1: Break eggs in a bowl and add vanilla essence, milk, powdered sugar, butter.

Step 2: Beat it really good and add rava, fresh coconut. Mix well.

Step 3: Blend the grated fresh coconut once in mixer before adding.

Step 4: Cover and rest the batter for overnight or 8 hours.

Step 5: Add baking powder, salt, cardamom powder and mix well.

Step 6: Line up a baking tray with butter paper and pour the batter into it.

Step 7: Tap the tray well and bake the cake in oven at 180 Deg C for 40 minutes.

Step 8: Take the tray out and let the cake cool down completely.

Step 9: Loosen the edges with knife and flip the cake over into a dish. Goan coconut cake is all ready.

Notes

  • If you don’t have that much time, then rest the batter at least 1 hour.
  • Preheat the cooker for 5 minutes and bake the cake on low to medium heat for about 40-45minutes.
  • When the cake cools down completely you can store it in an airtight container for about 3-4 days.
