Plum cake is a traditional Christmas special recipe. For making a classic plum cake a mix of fruits and nuts and soaked in alcoholic beverages like brandy or rum or wine for many days or even months. These are opened only when the cake is to be baked and this is how the cake gets that typical slightly bitter taste. But today we are not using any alcohol or not even using egg. This is very easy and simple recipe.

Ingredients

  • 1/4 cup / 30 gm Cashew nuts
  • 1/4 cup / 40 gm dry Fig
  • 1/4 cup/ 55 gm Tutti frutti
  • 1/4 cup / 40 gm black Raisins
  • 1/4 cup / 30 gm dried Cranberries
  • 1/4 cup / 50 gm dried Apricots
  • 1/4 cup / 35 gm dried Kiwi
  • 1/4 cup / 25 gm Almonds
  • 1 cup / 240 ml Orange juice
  • 1/2 cup / 120 ml Oil
  • 1 1/2 cup / 200 gm Maida
  • 1/2 cup / 50 gm powdered Sugar
  • 3 tbsp / 22 gm unsweetened Cocoa powder
  • 1 tsp / 4 gm Baking powder

Eggless plum cake

 

Instructions

Step 1: Soak cashew nuts, dry fig, tutti frutti, black raiains, cranberries, dried apricots, dried kiwi, almonds in orange juice overnight or at least 4-5 hours.

Step 2: Add oil and mix well.

Step 3: Mix maida, powdered sugar, unsweetened cocoa powder, baking powder and strain into the wet mixture. Mix well.

Step 4: Line up a baking tin with butter paper and transfer the batter into it.

Step 5: Tap the tin well and garnish with cashew nuts.

Step 6: Preheat the oven at 180 Deg C for 5 minutes and bake the cake at 180 Deg C for about 40-45 minutes.

Step 7: Let the cake cool down completely and loosen the edges with a knife.

Step 8: Flip over the tin into a dish and plum cake is all ready.

Notes

  • You can make combination of walnuts, cashew nuts, almonds, black raisins and tutti frutti in place of all above ingredients.
  • You can use peanuts also.
  • Mix 1 cup water, juice of 1 lemon and 2 tsp sugar well and use it in place orange juice.
  • You can use 1 cup rum too.
  • You can us butter in place of oil.
