Christmas Special Chocolate Plum Cake

Christmas special plum cake can also be called as chocolate fruit cake. It gets nice color and perfect texture. This is eggless cake and can be made from the ingredients those are available n your pantry. It doesn’t need too many fancy ingredients. It tastes close to rum cake. Generally while making plum cake rum is used in the recipe for soaking the fruits or dry fruits. Here we are using orange juice in place of rum. Dry fruits give nice flavor to juice in in turn to cake. This cake turns out nice, spongy, soft and fluffy. Kids will definitely love this cake.

Ingredients

  • 1/2 cup Orange juice
  • 2 tsp Apricot
  • 2 tsp Cranberries
  • 2 tsp Blueberries
  • 2 tsp Raisins
  • 2 tsp chopped Almonds
  • 2 tsp chopped Walnuts
  • 1/2 cup powdered Sugar
  • 1/4 cup Oil
  • 1 cup Maida
  • A pinch of Salt
  • 1/2 tsp Baking soda
  • 1 tsp Baking powder
  • 3 tsp unsweetened Cocoa powder

Instructions

Step 1: In a bowl take orange juice and add apricot, cranberries, blueberries, raisins, almonds, walnuts.

Step 2: Mix everything well together and let the dry nuts soak in orange juice overnight or at least for an hour.

Step 3: Add powdered sugar, oil and mix everything well together.

Step 4: Sieve maida, salt, baking soda, baking powder into the wet mixture and mix well.

Step 5: Sieve cocoa powder into the mixture and mix everything well together.

Step 6: Line up a cake tin with butter paper from all sides and add a layer of dry fruits those are used in the cake at the base of the tin.

Step 7: Pour the cake batter into the tray and tap it well.

Step 8: Preheat a cooker on medium heat for about 5 minutes and place a stand at the base.

Step 9: Place the cake on the stand and bake it on medium heat for 40 minutes.

Step 10: Turn off the gas and let the tin be in the cooker for another 5 minutes.

Step 11: Take the cake out and check it with tooth pick.

Step 12: Let the cake cool down for about 30-45 minutes.

Step 13: Take the cake out and chocolate plum cake is all ready.

Notes

  • You can add 1 tsp lemon juice in 1/2 cup water and use it in place of orange juice.
  • You can use butter in place of oil.
  • You can sieve cocoa powder along with all other dry ingredients too.
  • You can add 2 tsp rum or rum essence or fruit essence if you want.
  • Adding the layer of dry fruits at the base of the cake tin is optional. You can skip it if you don’t want.
  • Avoid garnishing the cake with these dry fruits as due the weight of these dry fruits cake sinks.
  • You can add a layer of salt at the base of the cooker if you want.
  • If you don’t have blueberries or cranberries then you can use the combination of almonds, black raisins, cashew nuts and walnuts.
