Today’s recipe fruit cake is eggless. This tastes similar to Britannia fruit cake. There were lot many requests for cakes and cookies recipes. So here is a very simple recipe for you. We are not using any butter, condensed milk or egg in this recipe. This can be made from the ingredients easily available in your pantry. Do try this recipe and drop a comment for me. Ingredients

  • 1 cup Curd
  • 1/2 tsp Baking soda
  • 1/2 cup Oil
  • 3~4 drops Fruit essence
  • 3/4 cup Powdered sugar
  • 2 cups Maida
  • 2 tsp Baking powder
  • 1/2 cup Tutti frutti

Instructions

  • Take curd that is at room temperature into a bowl. Do not use cold curd.
  • Add baking soda, oil, fruit essence and mix well.
  • You can use ice cream essence or vanilla essence in place of fruit essence.
  • After mixing it a little add powdered sugar and mix well.
  • Rest the mixture for about 2 minutes.
  • Take maida into another bowl.
  • Add baking powder and mix well.
  • Sieve the maida into the mixture of curd and mix well.
  • Fold the mixture carefully. Do not over mix.
  • Use cut and fold method for mixing. No need to add water.
  • After mixing the batter well add tutti frutti and mix well.
  • Grease a baking tray well with oil and line up a wax paper at the base of the tray.
  • Transfer the batter into the tray and spread the batter evenly.
  • Tap the tray really good and transfer it into the oven.
  • Bake on 180 Deg C for about 35-40 minutes.
  • Take the cake out and let it cool for about 10 minutes.
  • Check with toothpick. If the toothpick comes out clean it means the cakes is baked well.
  • Loosen the edges with the help of a knife and place a dish over the tray.
  • Flip the tray over and take the cake out.
  • Let the cake cool down a little and cut it into pieces of about 1” thickness.
  • You can bake the cake in cooker too.
  • Add a thin layer of baking soda of salt at the base of the cooker.
  • Remove the ring and whistle of the cooker.
  • Close the lid and preheat the cooker on low heat for 10 minutes.
  • Put an empty pot at the base of the cooker and cake tin on it.
  • Close the lid and bake the cake on low heat for about 35-40 minutes.
  • Fruit cake remains good on room temperature for about 4-5 days.
