Ingredients

Stuffing

  • 1 tsp Ghee
  • 1 tsp Poppy seeds
  • 1 tbsp assorted Dry nuts (Optional)
  • 2 cup shredded fresh Coconut
  • 1 cup Gudh / Jaggery
  • 1/4 tsp Cardamom powder
  • A pinch of Nutmeg powder

Cover

  • 1 cup Water
  • 1/2 cup Milk
  • 1 tsp Ghee
  • Salt to taste
  • 1 cup fine Rava
  • Few Saffron strands

Suji Modak

Instructions

Stuffing

Step 1: Heat up a pan on medium heat and add ghee, poppy seeds, dry nuts.

Step 2: Fry together for about a minute and add coconut.

Step 3: Fry for about 3-4 minutes and add gudh.

Step 4: Cook everything well together for another 4-5 minutes until gudh melts.

Step 5: Turn off the gas and add cardamom powder, nutmeg powder.

Step 6: Mix well and let it cool down. Stuffing is ready.

Step 7: Heat up water and milk together on medium heat.

Step 8: When the mixture begins to boil turn the gas to low heat and add ghee, salt. Mix well.

Step 9: Add a little rava at a time and mix in quickly. No lumps of rava should be formed.

Step 10: Mix everything well together and turn off the gas.

Step 11: Cover and steam it for about 10 minutes.

Step 12: Transfer the ukad into a dish and knead it really good.

Step 13: Dip your hand in water and knead ukad with wet hand.

Step 14: When the dough becomes nice, soft and smooth, take small portion from it.

Step 15: Roll balls from the dough and keep them covered with cotton cloth.

Step 16: Take one ball and make pari like we make for modak.

Step 17: Pinch the edges to make “kalya” or “palkya.”

Step 18: Fill in the stuffing into the cover and bring the edges together.

Step 19: Close the edges together and seal it well. Keep the modak cover with cotton cloth.

Step 20: Garnish modak with saffron strands and place them on a banana leaf for steaming.

Step 21: Heat up water at the base of the steamer and place the modak dish on it. 

Step 22: Close the lid and steam modak on medium heat for about 7-8 minutes.

Step 23: Turn off the gas and let the modak be in the steamer for another 5 minutes.

Notes

  • Adding dry nuts is optional. You can skip it if you don’t want.
  • You can knead the ukad in food processor too.
  • You can grease your hand with a little water or ghee while making pari.
  • You can use wet cotton cloth in place of banana leaf to steam modak.
  • You can make around 15-16 modak from the proportion we have used.
  • You can use cooker or big pot or big kadhai if you don’t have steamer.
