Ingredients

  • 1 cup Rice flour
  • 2 tbsp Milk
  • Salt to taste
  • 1 cup Water
  • 1/2 tsp Ghee
  • 1 tsp Poppy seeds
  • 1 cup Fresh Coconut
  • 1/2 cup Jaggery
  • 1 tbsp Dry fruits (Optional)
  • 1/4 tsp Cardamom powder
  • Green food color
  • Orange food color
  • Oil
  • Ghee

Instructions

  • Heat up water in a pan.
  • Add milk, salt, and ghee. Bring it to boil.
  • When water begins to boil, turn off the gas and add rice flour.
  • Mix well and keep it covered for about 10 minutes.
  • Heat up a pan on medium heat and add poppy seeds.
  • Dry roast it until it gets a light golden color.
  • Add fresh coconut and fry for about a minute.
  • Add jaggery and dry fruits. You can skip dry fruits if you don’t want.
  • Mix well and fry for about 5-7 minutes until it becomes a little dry.
  • Turn off the gas and add cardamom powder.
  • Mix well and let the mixture cool down. Stuffing is already.
  • Take ukad into a dish and knead it really good for at least 7-8 minutes.
  • If you feel the ukad getting dry, then you can use a little ghee or hot water while kneading.
  • Divide ukad into 3 portions.
  • Take green and orange food color and make it a little liquid.
  • Add green color into one dough ball and knead it. Keep it covered.
  • Add orange color in other dough ball and knead again.
  • Make 11 balls each from all 3 white, green, and orange color dough balls.
  • Take one ball each and press them together.
  • There should no gap left. It should be properly sealed.
  • Make pari from tri color dough ball by pressing it lightly from the edges.
  • The pari should be nice and even.
  • If the dough sticks to hand while making pari or modak, then use dry rice or corn flour while making
  • pari or modak.
  • Make plates to pari and add stuffing in it. Close the modak.
  • If you can’t make pari with hands, then you can roll it with a rolling pin.
  • Take steamer and spread the oil to its base so that modak won’t stick.
  • You also can use banana leaves or clean cloth.
  • Transfer the modak into it.
  • Heat up 1” water at the base of the steamer.
  • Place the pot with modak on it.
  • Close the lid and steam on medium heat for 15 minutes. Do not steam high heat.
  • Take modak out and serve them hot with lots of ghee.
  • We can make 11 medium size modak from 1 cup flour.

Notes

  • Milk gives a binding and nice color to modak.
  • While making pari or modak if the dough sticks to hand then do not use oil or ghee. If you use oil or ghee, you won’t be able to make nice folds while making modak. Use dry rice flour or cornflour.
  • If you steam modak on high heat, they will break and stuffing will come out.
