Ingredients

  • 1 tsp Oil
  • 2 big sliced Onions
  • Chopped Ginger
  • 2~3 Garlic cloves
  • Grated dry Coconut
  • Coriander leaves
  • 3 tbsp Oil
  • 2~3 Cloves
  • 2~3 Black peppercorns
  • 2 green Cardamom
  • 2 tsp Kanda lasun masala
  • 2 tsp Red chili powder
  • Salt to taste
  • Hot Water as needed
  • 1/2 cup roasted Chana dal
  • 1/4 tsp Coriander powder
  • 1/4 tsp Turmeric powder
  • Salt to taste
  • 1/2 tsp Red chili powder
  • Oil as needed
  • 250 gm Paneer
  • 1 tsp Corn flour
  • Water as needed
  • Salt to taste

Anda masala

Instructions

Step 1: Heat up oil in a pan and add onion, ginger and garlic.

Step 2: Fry everything well together until it gets nice golden color.

Step 3: When onion gets nice golden color, move it along the edge of the pan and add coconut at the center of the pan.

Step 4: Fry the coconut well until it gets golden color and mix it well with onion.

Step 5: Turn off the gas and let the mixture cool down a little.

Step 6: Transfer it into a blender jar and add coriander leaves.

Step 7: Blend it into fine paste. Avoid use of water while blending. If needed add a little water while blending.

Step 8: Heat up oil in a pan and add blended paste.

Step 9: Fry it well for about 4-5 minutes on medium heat.

Step 10: When oil begins to release from the masala, add cloves, black peppercorns and green cardamom.

Step 11: Add kanda lasun masala, red chili powder and mix well.

Step 12: Add salt and fry everything well together for about 2-3 minutes.

Step 13: When oil begins to release from the masala, add hot water and mix well.

Step 14: Simmer the gravy on medium heat for about 5 minutes. Curry is ready. 

Step 15: For making veg eggs, blend roasted chana dal, coriander powder, turmeric powder, salt, red chili powder together into powder and add oil.

Step 16: Blend it well together and transfer the mixture into a dish.

Step 17: Add oil just enough for binding and roll out small balls from it. If needed you can use water.

Step 18: Blend paneer into paste in food processor and add corn flour.

Step 19: Blend it well together and transfer the mixture into a dish.

Step 20: Take some paneer mixture and roll a ladoo from it.

Step 21: Make a hole at the center and fill in the chana dal ladoo into it.

Step 22: Cover it with paneer mixture and roll it into an egg.

Step 23: Heat up water in a pan and bring it to boil and add salt.

Step 24: Mix well and drop eggs into boiling water. 

Step 25: Cover and boil the eggs on high heat for about 10 minutes. Let the water cool down.

Step 26: Take the boiled eggs out into a dish and let it cool down.

Step 27: Cut each egg into 2 pieces.

Step 28: While serving serve the curry first and then add the eggs. Veg egg curry is ready.

Notes

  • You can use water in place of oil for chana dal mixture.
  • If needed you can chill the eggs in freeze.
  • You can serve the curry with chapati or fulka. It goes well with rice too.
