Anda masala is a very good side dish that goes well with naan, bhakari, plain paratha or even jeera rice. This is a simple egg curry that can be made very quickly. In this boiled eggs are coated in masala and dropped in gravy. This is a good variation to your regular egg curry. Do try it at home and do not forget to write me. Ingredients

  • 6 Boiled, peeled Eggs
  • 1 tsp Red chili powder
  • 1/2 tsp Garam masala
  • Salt to taste
  • 2 tbsp Besan / Chickpea flour
  • 3 tbsp Oil
  • 1 tsp Cumin seeds
  • 2~3 Bay leaves
  • 1 cup finely chopped Onion
  • 3 Tomato puree
  • 1 tbsp Red chili powder
  • 1 tbsp Garam masala
  • 1 tbsp Coriander powder
  • 1tsp Ginger garlic paste
  • 1 cup Water
  • Salt to taste
  • Coriander leaves

Instructions

  • Boil and peel eggs.
  • Add red chili powder, garam masala, and salt to taste.
  • Mix well. Make sure that eggs are coated well with the masala.
  • Prick the eggs with a fork and keep these aside.
  • Heat up a pan on medium heat and add besan.
  • Roast besan on medium heat until it gets light golden color for about 4-5 minutes.
  • Take it out into a dish.
  • Heat up oil in a pan.
  • Add eggs and fry these nicely.
  • Take the fried eggs out into a dish and keep these aside.
  • In the same oil add cumin seeds, bay leaves, and finely chopped onion.
  • Mix well and fry until onion turns nice golden.
  • Add tomato puree, red chili powder, garam masala, coriander powder, ginger-garlic paste.
  • Mix well and fry masala until it releases oil.
  • Add roasted besan and fry for about 2-3 minutes.
  • Add hot water to adjust the consistency and salt to taste.
  • Mix well and cook the gravy on medium heat for about 3-4 minutes.
  • Add eggs. You can either add whole eggs or cut these in half and add.
  • Cover and cook on medium heat for about 4-5 minutes.
  • Turn off the gas and garnish with finely chopped coriander leaves.
  • Anda masala is already.
  • Anda masala goes well with jawar, bajra or rice bhakari.
  • It goes well with plain paratha or naan.
  • It also goes well with jeera rice.

Notes

  • If you prick the boiled eggs, these won’t break while frying in the oil.
  • Adding roasted besan gives nice texture and thickness to the gravy.
  • Always add hot water to hot gravy. Hot water gives nice texture and color to the gravy.
