This is a popular snack recipe. There are many versions of dhokla like rava dhokla, besan dhokla, mixed lentil dhokla, rice and many more. Today I am showing you dhokla recipe made using rice and urad dal. There are two or three layers and a lot of mint coriander chutney is applied between two layers. It turns out nice and soft and you don’t need anything else to go with it. This can be a delicious way to finish off left over idly or dosa batter.

Ingredients

  • 1 cup Rice
  • 1/2 cup Urad dal
  • 1/2 cup Poha
  • 1/2 tsp Fenugreek seeds
  • Salt to taste
  • 1/4 cup roasted Chana dal
  • 2 chopped Green chilies
  • 3 Garlic cloves
  • Coriander leaves
  • Salt to taste
  • Water as needed
  • Red chili powder
  • 1 tsp Oil
  • 1/2 tsp Mustard seeds
  • 2 Green chilies
  • Finely chopped Coriander leaves

Dhokla chutney

Instructions

Step 1: Wash rice, urad dal, poha really good 3-4 times and add fenugreek seeds, water.

Step 2: Soak it in enough water for about 5 hours.

Step 3: Drain as much water as possible from the soaked mixture and blend it into paste. Use minimum water while blending.

Step 4: Transfer the batter into a bowl and ferment it overnight or for about 12-14 hours.

Step 5: Add salt and mix well.

Step 6: Take out 3 ladleful batter into another bowl.

Step 7: For making chutney blend roasted chana dal, green chilies, garlic, coriander leaves well first.

Step 8: Add salt, water and blend again into paste. Chutney is ready.

Step 9: Mix the chutney into the batter that we have taken out and keep it aside.

Step 10: Line up a tray with butter paper and add a thin layer of batter into it.

Step 11: Tap the tray well and steam it for just 5-7 minutes.

Step 12: Turn off the gas and pour the chutney batter on this layer.

Step 13: Spread the batter evenly and again steam for about 5-7 minutes.

Step 14: Turn off the gas and pour out the remaining white batter into the tray.

Step 15: Spread well and sprinkle red chili powder.

Step 16: Steam the dhokla for about 5-6 minutes.

Step 17: Open the lid and check with toothpick. If it comes out clean it means the dhokla is steamed well.

Step 18: Let the dhokla cool down completely.

Step 19: When dhokla cools down a little loosen the edges with the help of knife and flip over the tray into a dish. Remove the butter paper.

Step 20: For tadka heat up oil in a tadka pan and add mustard seeds.

Step 21: When mustard seeds pop up turn off the gas and add green chilies.

Step 22: Add this tadka on dhokla and garnish with coriander leaves.

Step 23: Cut it into pieces and sandwich dhokla is ready.

Notes

  • You can use a deep dish in place of tray.
  • Make sure you ass thin layer of batter
  • Take care to steam each layer for about 5-6 minutes only.
