Ingredients

  • 1 1/2 cup coarse Besan
  • 1 tbsp Sooji / Semolina
  • 1/2 tsp Turmeric powder
  • Salt to taste
  • 1 tsp Ginger-Garlic-Green chili paste
  • 3/4 cup Curd / Yogurt
  • 1/3 cup Water
  • 1 1/2 tsp Lemon flavored Eno fruit salt
  • 1 tsp Water
  • 1/2 cup Water
  • 1/2 tsp Sugar
  • 1/4 tsp Salt
  • 1 tbsp Oil
  • 1/2 tsp Mustard seeds
  • 1/2 tsp Hing / Asafetida
  • 2~3 Green chillies

Instructions

  • In a bowl take besan.
  • Add sooji, turmeric powder, salt, ginger, garlic green chili paste and yogurt.
  • Mix everything well together.
  • Add water and mix well.
  • No lumps of besan should be formed.
  • Add eno fruit salt and water. Mix well again. Batter is already.
  • Take ildy mould and grease it well with oil.
  • Add batter in each mould.
  • Take idly cooker and boil about 1” water in it.
  • Transfer the idly mould in idly cooker.
  • Close the lid and steam on medium heat for about for 15 minutes.
  • Take water into a bowl.
  • Add sugar, salt and mix well.
  • Sugar water is ready.
  • Open the lid of idly cooker and take the idly mould out.
  • Give it a standing time of about 10 minutes.
  • Take the idly dhokla out of the mould with the help of spoon.
  • Add sugar water on all idlies.
  • Heat up oil in a tadka pan.
  • Add mustard seeds, hing and green chillies.
  • Cover and rest it for about 3-4 minutes.
  • Add tadka on idly dhokla.
  • Sprinkle coriander leaves.
  • Idly dhokla is already.
  • You can have this as it is.
  • You can serve this idly dhokla with any chutney.

Notes

  • You can use fine besan if you don’t have coarse besan.
  • Adding sugar water on dholka to keep it moist for longer time and dhokla does not dry out.
