Ingredients

  • 1 cup Water
  • Salt to taste
  • 1 tbsp Sugar
  • 1 tsp Citric acid
  • 1 tbsp Oil
  • 1 1/2 cup Besan
  • 1/2 tsp Turmeric powder
  • 1 tsp Baking soda
  • Water
  • 1 tsp Sugar
  • 1 tsp Oil
  • 1 tsp Mustard seeds
  • 3~4 Green chilies

Khaman dhokla

Instructions

Step 1: Take water in a bowl and add salt, sugar, citric acid, oil.

Step 2: Mix everything well together for about 4-5 minutes until sugar, citric acid is dissolved.

Step 3: Sieve besan, turmeric powder into the bowl and beat the mixture in one direction for about 4-5 minutes until the mixture becomes light.

Step 4: Cover and rest the batter for about 10-15 minutes.

Step 5: Add baking soda and mix in quickly.

Step 7: Pour out the batter into a tray and tap it well.

Step 8: Steam the dhokla in steamer on medium heat for about 15 minutes.

Step 9: Turn off the gas and let the dhokla be in the steamer for another 5 minutes.

Step 10: Check the dhokla with tooth pick. If it comes out clean it means dhokla is steamed well.

Step 11: Take the tray out and let the dhokla cool down.

Step 12: Dissolve sugar in water to make sugar syrup. You can add a pinch of salt in it if you want.

Step 13: For tadka heat up oil in a tadka pan and add mustard seeds.

Step 14: When mustard seeds pop up turn off the gas and add green chilies.

Step 16: When dhokla cools down cut it into pieces and add sugar syrup on it.

Step 17: Rest the dhokla for about 10-15 minutes.

Step 18: Add tadka on the dhokla and sprinkle coriander leaves.

Step 19: Take the dhokla out of the tray and nylon dhokla is all ready.

Instant Dhokla 

Notes

  • You can use hand blender for this purpose.
  • You can use cooker or kadhai in place of steamer. Just remove the whistle of the cooker before steaming.
  • You can add sesame seeds or curry leaves in tadka if you want.
  • You can use Eno fruit salt in place of citric acid. Then in the case skip baking soda.

Servings

This is an instant and real quick recipe. We are not using curd or Eno in this recipe. You can serve this as it is or with some green chutney or sweet tamarind chutney.
