Ingredients

For stuffing

  • 2 tsp Oil
  • 1/2 tap Cumin seeds
  • A pinch of Hing
  • Garlic-Green chili paste (4~5 Green chilies and 7~7 Garlic cloves blended coarse in mixer)
  • 1/4~1/2 tsp Turmeric powder
  • 2 boiled and peeled Potatoes
  • Salt to taste
  • Finely chopped Coriander leaves

For Coating

  • 1 cup Besan
  • 2~3 tsp Rice flour
  • A pinch of Baking soda
  • Salt to taste
  • Turmeric powder
  • Green chili paste
  • Water

For Pav Vada

  • Ladi pav
  • Oil for frying
  • Green chilies
  • Vinegar or Lemon juice

Instructions

For stuffing

  • Heat up oil in a pan.
  • Add cumin seeds and let it splutter.
  • Add hing and let it splutter.
  • Add garlic-green chili paste and fry for about a minute.
  • Add turmeric powder and mix well.
  • Turn off the gas.
  • Add potatoes and mash them well with masher.
  • Add salt, coriander leaves and mix well. Stiffing is all ready.

For Coating

  • Take besan in a bowl.
  • Add rice flour, baking soda, salt, turmeric powder green chili paste and mix everything well together.
  • Add a little water at a time and make a little thick batter.
  • The consistency of batter should be in between medium to thick, a little towards on thicker side.
  • Rest the batter for about 10-15 minutes.

For Pav Vada

  • Take ladi pav.
  • You can use bun too a little small in size than burger bun.
  • Make a slit at the center of the pav.
  • Do not cut it open. Just make a slit.
  • You can say make a pocket in the pav.
  • Fill the potato stuffing in the pocket.
  • Mix the batter well once and coat the stuffed pav well with batter from all sides.
  • Heat up oil in a pan on medium heat.
  • When oil is enough hot, drop the stuffed and coated vada in it.
  • Fry vada until it gets nice golden color from both sides.
  • When lower side gets nice golden color flip it over with fork and fry well from other side as well.
  • When vada is fried well from both sides take it out, drain excess oil and transfer them into a dish.
  • Give a slit to green chilies and drop them in hot oil.
  • Fry until green chilies change the color.
  • Soak the chilies in vinegar or lemon juice for about 5-6 minutes. This reduces the hotness of chilies.
  • After removing from vinegar, coat the chilies in salt and fried chili is all ready.
  • While serving cut the pav vada into pieces and serve with tamarind sauce, sliced onion and fried chili.
