This vada tastes just awesome and the speciality of this vada is in the style of serving. It turns out nice, crispy and just yumm. We already have seen different vada recipes. So this is another addition to it. You can try this recipe at home.

You can call this as reverse vada pav. Stiffing in filled in ladi pav and then this pav is coated with batter and deep fried. The serving style of this vada is different and that is the usp of this recipe. Every town has its own food culture. This vada is an integral part of Solapur food culture.

Ingredients

  • 10~12 Green chilies
  • 10~12 Garlic cloves
  • 2 tsp Oil
  • 1/4 tsp Hing
  • Curry leaves
  • 1/4 tsp Turmeric powder
  • Boiled and mashed Potatoes
  • Salt to taste
  • Finely chopped Coriander
  • 1 cup Besan
  • 1/4 cup Rice flour
  • Salt to taste
  • A pinch of Baking soda
  • 1/2 tsp Red chili powder
  • 1/4 tsp Turmeric powder
  • 1/2 cup Water
  • Ladi pav
  • Oil for frying
  • Green chutney
  • Sweet Tamarind chutney
  • Finely chopped Onion

Instructions

Step 1: Take green chilies, garlic in a blender jar and blend into a coarse paste. Thecha is ready.

Step 2:For making stuffing heat up pan in a pan and hing, curry leaves, thecha and fry well.

Step 3: Turn off the gas and add turmeric powder.

Step 4: Mix well and add potatoes, salt.

Step 5: Mix well and add coriander.

Step 6: Mix well and stuffing is ready.

Step 7: For making batter for making vada take besan, rice flour, salt, baking soda, red chili powder, turmeric powder and mix everything well together.

Step 8: Add a little water at a time to make medium consistency batter.

Step 9: Add coriander and mix well.

Step 10: Take ladi pav and cut it into 2 parts. Do not cut all the way through.

Step 11: Fill the stuffing into it and close the bread up.

Step 12: Dip the pav into the batter and coat it well from all sides.

Step 13: Heat up oil in a pan and drop vada into hot oil.

Step 14: When vada is fried well from one side flip it over and fry well from other side too.

Step 15: When vada is fried well from both sides take it out, drain excess oil and transfer into a dish.

Step 16: While serving give 2-3 cuts to vada and open it.

Step 17: Fill in green chutney, sweet tamarind chutney.

Step 18: Garnish with onion, coriander and shev. Sangam vada is all ready.

Notes

  • You can remove the curry leaves if you want.

Servings

You can serve Sangam vada as it is or with some sweet tamarind chytney, shev, onion and a cup of hot tea. It tastes just awesome and is very easy to make.

I am from Solapur and this is my all time favorite recipe. Thanks Madhura for sharing recipe. I really loved this. Its easy and quick to make.
