Ingredients

  • 250 gm Khava / Mawa
  • 1/4 cup Milk powder
  • 2 tsp Maida
  • A pinch of Baking soda
  • 1~2 tsp Milk
  • 250 gm Sugar
  • 250 ml Water
  • Few Saffron strands
  • 3~4 Cardamom pods
  • Gulabjamun

Instructions

Step 1: Grate the khava and knead it really good for about 3-4 minutes.

Step 2: Apply the pressure with the base of your palm while kneading the khava.

Step 3: Add milk powder, maida and baking soda and knead it well together.

Step 4: Add milk and knead it well again.

Step 5: Roll out small balls from the dough.

Step 6: For making sugar syrup heat up a pan on medium heat and add sugar, water and saffron.

Step 7: Mix well and bring it to boil on high heat.

Step 8: When sugar dissolves, reduce the heat to medium and cook the syrup for about 7-8 minutes.

Step 9: Add cardamom pods and check the consistency.

Step 10: The syrup should be just sticky. We are not looking for any thread consistency.

Step 11: Turn off the gas and sugar syrup is ready.

Step 12: For frying gulabjam heat up oil in a pan on high heat for 5 minutes and reduce the heat to low.

Step 13: When oil is hot enough drop gulabjam in it and fry on low heat well from all sides.

Step 14: Roll them well in oil until they get nice golden color.

Step 15: When gulabjam are fried well take them out, drain excess oil and transfer them into hot syrup.

Step 16: Roll them well in syrup and soak well. Gulabjam are ready.  

Notes

  • You can use 1/4 cup paneer in place of milk powder. For that grate the paneer and knead it well and then mix with khava.
  • You can use water in place of milk.
  • Apply pressure while rolling gulabjam so that they won’t dissolve while frying.
  • The gulabjam should be smooth and even. There should not be any cracks on them.
  • You can make around 30 gulabjam from the proportion used.
