Ingredients

For Gulabjam Dough:

  • 250 gm Khava / Khoya / Mawa
  • 2 tsp Sabudana flour
  • 4 tsp Milk

For making sugar syrup:

  • 1 cup Sugar
  • 1/2 cup Water
  • 1/4 tsp Cardamom powder

For Making Gulabjam:

  • Oil for frying

Instructions

For Gulabjam Dough:

  • Grate the khoya so that no lumps are left in it.
  • Add sabudana flour and mix it well with khava.
  • If you don’t have sabudana flour then blend sabudana well in a mixer and sieve with suji strainer. Then mix it with khava.
  • You can roast the sabudana for about 4-5 minutes in a pan and then blend so that it becomes nice and fluffy.
  • Add milk and knead the dough really good with the palm of your hand.
  • Cover and rest the dough for about 15-20 minutes.

For making sugar syrup:

  • Heat up a pan.
  • Add sugar and water.
  • Mix well and let the sugar dissolve completely.
  • When the mixture begins to boil reduce the heat medium & cook the syrup for just another 3-4 minutes.
  • When the syrup becomes a little sticky, turn off the gas.
  • No need to look for any thread consistency.
  • The syrup should be a little thin so that it gets nicely absorbed into the gulabjam.
  • Add cardamom powder and mix well. You can add saffron if you want.
  • Sugar syrup is already.

For Making Gulabjam:

  • Heat up oil on medium heat.
  • Knead the dough well again and take a small ball from it.
  • Smoothen it out. No cracks should be there on the gulabjam.
  • Drop the gulabjam in oil and fry on low to medium heat until it turns nice golden from all sides.
  • Keep on rolling gulabjam continuously while frying.
  • When the gulabjam turns nice golden from all sides take it out of the oil and drop it in hot syrup.
  • If gulabjam dissolves while frying then knead the dough really good with the palm of your hand and then roll gulabjam again.
  • Upwas gulabjam are already.

Notes

  • Use minimum milk while kneading the dough. If you don’t use milk then its okay.
  • Knead the dough really good with the palm of your hand.
  • Fry gulabjam on low to medium heat.
  • The syrup should not be too thick.
