Ingredients

For Sugar Syrup:

  • 1 cup Sugar
  • 3/4 cup Water
  • Cardamom powder to taste

For Stuffing:

  • 4 tsp Gulkand
  • 4 tsp Dry nuts (Chopped Cashew nuts, Almonds, Pistachios)

For Gulabjam:

  • 4 Bread slices
  • A pinch of Baking soda
  • 1 tsp Ghee
  • Milk
  • Oil for frying

Instructions

For Sugar Syrup:

  • Heat up sauce pan on high heat.
  • Add sugar and water.
  • Mix well and bring the mixture to boil.
  • When sugar dissolves completely and mixture boils lower down the heat to medium.
  • Cook syrup on medium heat for another 5-6 minutes.
  • The syrup should not have any thread consistency. It should be just sticky.
  • Turn off the gas and add cardamom powder.
  • You also can add a drop of rose essence too if you have.
  • Mix well and syrup is ready.

For Stuffing:

  • In a bowl take gulkand.
  • Add dry nuts and a little cardamom powder.
  • Mix well and stuffing is ready. Keep it aside.

For Gulabjam:

  • Take bread slices and remove the edges.
  • Cut the bread into pieces and transfer these into a blender jar.
  • Blend the bread into powder as we make breadcrumbs.
  • Transfer the blended bread into a dish.
  • Add baking soda and ghee.
  • Mix everything well together.
  • Add a little milk at a time and knead dough.
  • Bread absorbs moisture. Add milk accordingly.
  • The dough should neither be too thick nor too thin.
  • Cover and rest the dough for about 10 minutes.
  • Take the stuffing and make small balls from it.
  • Take a small portion of dough and make it nice and smooth.
  • Press it at the center to make pari as we make for modak.
  • Fill the stuffing and close the pari from all sides.
  • Make these smooth and even. There should not be any cracks.
  • Heat up oil on medium heat.
  • When oil is enough hot lower down the heat to low.
  • Drop the gulabjam into hot oil.
  • Fry gulabjam on very low heat until these turn nice and even golden form all sides.
  • Take the gulabjam out and drop these into hot syrup.
  • Make sure that the syrup is hot while dropping hot gulabjam in it.
  • Soak the gulabjam in syrup for at least 1 hour.
  • Bread gulabjam are already.
  • You can make 6 gulabjam from 4 bread slices.
  • You can skip the stuffing if you don’t want.
  • Also you can fill the stuffing in your regular gulabjam.
