Bombil fry is a crunchy and spicy fish recipe that is easy and simple to make. Fish is marinated with some spices, coated with rice flour mixture, dipped in besan batter and deep fried. Ingredients

  • Bombil / Bombay duck fish
  • 1 cup Rice flour
  • 1 cup Corn flour
  • 2 tsp Turmeric powder
  • 2 tsp Red chili powder
  • 1 tbsp Malvani fish masala
  • 1 tsp Lemon juice
  • 2 tbsp Ginger-Garlic paste
  • Finely chopped Coriander leaves
  • Salt to taste
  • Oil for frying

Instructions

  • Take the fish and cut off the fins.
  • Cut the fish into pieces according to the length you want.
  • Cut each piece into two pieces at the center.
  • If you want you can remove the bone part of the fish.
  • Transfer the cut fish into a bowl.
  • Take a newspaper and spread a piece of cloth on it.
  • Transfer the cut fish onto the cloth and cover it.
  • Again place another newspaper and put a heavyweight on it for about 20-25 minutes.
  • The moisture in the fish will be absorbed into the newspaper.
  • Transfer the fish into a dish.
  • Add ginger-garlic paste, turmeric powder, salt, coriander leaves, lemon juice, and mix well.
  • Let the fish marinate for about 15-20 minutes.
  • Take cornflour into a bowl.
  • Add a little turmeric powder, a little red chili powder, salt and mix well.
  • Add a little water at a time to make the batter having semi-thick consistency.
  • The batter should neither be too thick nor too thin.
  • Add malvani fish masala, red chili powder, and salt to taste into the marinated fish.
  • Be careful while adding salt as we already have added salt while marinating the fish.
  • If you don’t have malvani fish masala then you can mix a little coriander powder, cumin powder, red chili powder, garam masala, and use that masala.
  • On another plate take rice flour.
  • Add a little red chili powder, salt and mix well. Rice flour mixture is ready.
  • Heat up oil in a pan.
  • Coat the fish with rice flour mixture, dip them in the batter, and drop in hot oil.
  • Fry on medium heat for about 3-4 minutes.
  • Take the fish out of the oil onto a plate.
  • Bombil fry is already.
  • You can have bombil fry as it is.

Notes

  • Corn flour gives a nice crispy coating to the fish fry & that crisp lasts longer too.
  • If we dip masala coated fish into the batter all the masala will get mixed with the batter. To avoid that, we will coat the fish with rice flour mixture and then dip them in the batter.
