Banana Bun and Veg Korma

Today’s recipe is Konkani babana bun and veg korma, that is we are making bun and veg korma in traditional way. Do you know? This is Sachin Tendulkar’s favorite recipe. The bun turns out nice and crispy and puffs up like puri. Korma looks tempting and tastes super delicious. As we are using lot many veggies in korma, this is a healthy and easy to make recipe. This is Konkani recipe. We already have seen veg korma recipe. Today, going a step ahead, let’s make bun and korma. This combination looks nice and tastes just awesome. This is a popular breakfast recipe in Gokarna, Karwar districts. The sweet banana buns go fantastic with spicy and testy korma. Korma is a simple and creamy spicy curry that is made with mixed veggies. It has coconut base masala that gives nice and creamy texture to the curry.

This recipe is a healthy and easy to make. There are different variations on making the korma. But today, I am showing you a simpler method. It is a quick one as we are making it in cooker. We already have seen different Konkani breakfast recipes. This is yet another delicious addition to the list. You can have it as breakfast or brunch too. If you don’t want to make korma then you can serve the buns with chutney too.

Ingredients

Banana Bun

  • 2 ripe Bananas
  • Powdered Sugar as needed
  • 1 – 1 1/2 tbsp Curd
  • 1 tsp Cumin seeds
  • Black Pepper powder to taste
  • Salt to taste
  • 2 pinches Baking soda
  • 1 tsp Ghee
  • Maida as needed
  • Ghee
  • Oil for frying

Veg Korma

  • 2 tbsp Cashew nuts
  • Ginger
  • Garlic
  • 1 chopped Tomato
  • 1 chopped Onion
  • 2 tbsp desiccated Coconut
  • 2 tbsp Oil
  • Cinnamon
  • Cloves
  • Black Pepper corns
  • 1 tsp Kitchen king masala
  • 1 tsp Red chili powder
  • 4~5 chopped French beans
  • 1/4 cup frozen Peas
  • Cauliflower florets
  • 1 small chopped Potato
  • 1/2 Carrot chopped
  • 4~5 Cashew nuts
  • Salt to taste
  • 1 cup Water

Instructions

Banana Bun

Step 1: Mash the bananasa well with fork and add powdered sugar, curd, cumin seeds, black pepper powder, salt, baking soda.

Step 2: Mash it well together.

Step 3: Add maida and knead stiff dough. Make sure you don’t use any water at all to knead dough.

Step 4: Add that much maida that is needed to knead stiff dough.

Step 5: Spread ghee and knead the dough well again.

Step 6: Transfer the dough into a dabba and ferment it overnight or for at least 7-8 hours.

Step 7: Take a small portion from the dough and roll out bun from it.

Step 8: Make sure you roll a little thick bun. If needed you can use dry flour while rolling the bun.

Step 9: Heat up oil on medium heat in a pan and drop bun into it.

Step 10: Fry bun on low heat well from both sides.

Step 11: When lower side is fried well, flip the bun over and fry well from other side too.

Step 12: When bun is fried well from both sides, take it out, drain excess oil and transfer it into a dish. Bun is ready.

Veg Korma

Step 13: Blend cashew nuts, ginger, garlic, tomato, onion, desiccated coconut together into fine paste in mixture.

Step 14: The vatan should have smoothie like texture.

Step 15: Heat up oil in a cooker and cinnamon, cloves and black pepper corns.

Step 16: Add the blended paste and fry it well on low heat until oil is released from the masala.

Step 17: Add kitchen king masala, red chili powder and mix well.

Step 18: Add French beans, frozen peas, cauliflower, potato, carrot and salt and mix everything well together.

Step 19: Add water and mix well.

Step 20: Close the lid and cook korma on low heat until 1 whistle. Veg korma is ready.

Notes

  • You can grate the bananas or blend in mixer or mash with hands too.
  • You can use cumin powder in place of cumin seeds.
  • It’s better if you use hung curd.
  • You can use gudh and wheat flour in place of sugar and maida.
  • You can use fresh coconut if you want in korma.
  • You can add veggies of your choice.
  • Or you can steam korma on medium heat for about 10 minutes.
  • You can serve bun with chutney too. To make chutney, fry coconut, tomato, peanuts, urad dal, chana dal a little in oil and blend it into puree. Serve this with bun. Or if you want to serve bun to kids then roll the bun in donuts shape. Mix powdered sugar, nut meg powder and cinnamon powder well together and spread it on the bun and serve it to kids.
