Dasara is celebrated with great joy all over India. It is one of 3 1/2 auspicious days in Marathi calendar. Though I haven’t used onion and garlic in this thali, it tastes simply delicious. Ingredients

Chutney

  • 2 tbsp roasted Chana dal
  • 2 tbsp grated fresh Coconut
  • 1 Green chili
  • Sugar to taste (Optional)
  • Salt to taste
  • Coriander leaves
  • Water as needed

Kakdichi Koshimbir

  • 1 Cucumber
  • 1/2 cup Curd
  • Finely chopped Green chili
  • Sugar to taste
  • Salt to taste
  • 2 tbsp roasted Peanut powder
  • Finely chopped Coriander leaves

Ravyache Vade

  • 1 cup fine Rava / Suji
  • 2 finely chopped Green chilies
  • 1 tsp grated Ginger
  • Salt to taste
  • 1 tbsp finely chopped Capsicum
  • Finely chopped Coriander leaves
  • 1/4 cup Curd
  • 1/4 cup + 2 tsp Water
  • 1 pinch of Baking soda (Optionl)
  • Oil for frying

Navratan Korma

  • 2 tbsp Ghee
  • 14~15 Cashew nuts
  • 10~12 Almonds
  • 1 tbsp Raisins
  • 1/2 tsp Cumin seeds
  • 1 peeled and chopped Potato
  • 1 peeled and chopped Carrot
  • 4~5 chopped French beans
  • Cauliflower florets
  • 1/2 cup Curd
  • 2 slit Green chilies
  • 2 green Cardamom
  • 3~4 Cloves
  • 2~3 Black peppercorns
  • 1 tsp Coriander powder
  • 1/4 tsp Turmeric powder
  • 1 tsp Red chili powder
  • 2 tbsp Cashew nuts & Melon seeds
  • 1 tbsp Khava / Khoya (Optional)
  • Water as needed
  • Salt to taste
  • Sugar to taste (Optional)
  • 100 gm Paneer cubes
  • 1/4 cup frozen Peas

Ravyachi Kheer

  • 2 tbsp Ghee
  • 1/4 cup fine rava / Suji
  • Chopped Dry nuts
  • 50 gm Khava / Khoya (Optional)
  • 500 ml hot Milk
  • Few Saffron strands (Optional)
  • 1/2 cup Sugar

Masala Pulav

  • 1 cup Bsamati rice
  • 1 tbsp Oil
  • 1 tsp Cumin seeds
  • 1 Star anise
  • 2 green Cardamom
  • 2~3 Cloves
  • 2~3 Black peppercorns
  • 1 Bay leaf
  • 1 finely chopped Tomato
  • 1 tsp grated Ginger
  • 4~5 French beans
  • 1 cup Cauliflower
  • 1/4 cup frozen Peas
  • 6~7 Cashew nuts
  • 1/4 tsp Turmeric powder
  • 1 tsp Coriander powder
  • 1 tsp Kitchen king masala
  • Salt to taste
  • 2 tsp Red chili powder
  • Water as needed
  • 1 tsp Ghee

Instructions

Chutney

Step 1: Blend roasted chana dal, fresh coconut, green chili, sugar and salt well together into powder first. Avoid use of water now.

Step 2: Add coriander leaves and water and blend it together into paste. Chutney is ready.

Kakdichi Koshimbir

Step 3: Wash cucumber really good and peel it.

Step 4: Grate the cucumber and squeeze out the water if you want.

Step 5: Mix curd, green chili, sugar, salt well and beat the mixture really good.

Step 6: Add grated cucumber, roasted peanut powder, coriander leaves and mix everything well together. Koshimbir is ready.

Ravyache Vade

Step 7: Mix rava, green chili, ginger, salt, capsicum, coriander leaves, curd and water well together. The batter should be thick.

Step 8: Cover and rest the batter for about 30 minutes.

Step 9: Add baking soda and mix well.

Step 10: Heat up oil in a pan and drop vade into it.

Step 11: Fry vade on medium to high heat well until it gets nice golden color from all sides.

Step 12: Take the vade out, drain excess oil and transfer them into a dish. Ravyache vade are ready.

Navratan Korma

Step 13: Heat up a pan on medium heat and add ghee.

Step 14: When ghee is hot enough, add cashew nuts and fry it.

Step 15: When cashew nuts are almost roasted add almonds and fry it well together.

Step 16: When both are fried well, add raisins and fry well.

Step 17: Take these all out into a dish.

Step 18: In the same ghee add cumin seeds and let them splutter.

Step 19: Add potato and mix well.

Step 20: Cover and steam the potato for about 5-6 minutes.

Step 21: Add carrot, French beans, cauliflower florets and mix well.

Step 22: Cover and steam the veggies well until they are cooked for about 7-8 minutes.

Step 23: Turn the gas on very low heat and move the veggies along the edge of the pan.

Step 24: Add curd in the remaining space and green chilies, green cardamom, cloves, black peppercorns, coriander powder, turmeric powder, red chili powder into curd.

Step 25: Mix curd and spices well and fry the mixture for about 5 minutes on low heat.

Step 26: Soak cashew nuts and melon seeds in hot water for about 30 minutes

Step 27: Drain all the water from it and blend it together dry first.

Step 28: Add water and blend it together into fine paste.

Step 29: Add blended paste, khava and mix it well with curd mixture.

Step 30: Mix the curd mixture well with veggies and add water, salt and sugar.

Step 31: Mix everything well together and add paneer.

Step 32: Mix well and cook for just about 2-3 minutes.

Step 33: Add the fried cashew nuts, almonds and raisins and mix well.

Step 34: Add frozen peas and mix well.

Step 35: Cook for just about 4-5 minutes and navaratan korma is ready.

Ravyachi Kheer

Step 36: Heat up a pan on medium heat and add ghee.

Step 37: Add rava and fry it together until rava gets nice golden color.

Step 38: When rava begins to turn light golden, add dry nuts and mix well.

Step 39: Fry it together for another 3-4 minutes and move it along the edge of the pan.

Step 40: Add khava in the remaining space and fry it for about a minute.

Step 41: Mix the khava and rava well together and add a little hot milk at a time and mix well.

Step 42: Add saffron and mix well.

Step 43: Simmer the mixture well for at least 8-10 minutes.

Step 44: Add sugar and mix well.

Step 45: Cook the kheer for just 2-3 minutes more and turn off the gas. Ravyachi kheer is ready.

Masala Pulav

Step 46: Wash rice really good 3-4 times and soak it in enough water for about 30 minutes. Drain all the water from it.

Step 47: Heat up oil in a pan and add cumin seeds, star anise, green cardamom, cloves, black peppercorns, bay leaf, tomato and fry it.

Step 48: When tomato is almost fried add ginger and mix well.

Step 49: Add French beans, cauliflower and mix well.

Step 50: Cover and steam the veggies for about 5 minutes.

Step 51: Add frozen peas and cashew nuts and mix well.

Step 52: Add the rice, turmeric powder, coriander powder, kitchen king masala, salt and red chili powder and mix everything well together.

Step 53: Add water and ghee and mix well.

Step 54: Cover and cook the rice on low to medium heat for about 15 minutes.

Step 55: Turn off the gas and masala pulav is ready.

Notes

  • Adding sugar in chutney is optional. You can skip it if you don’t want.
  • If you want dry chutney then reduce the quantity of water accordingly.
  • You can use veggies of your choice in ravyache vade.
  • Adding baking soda in vade is optional. You can skip it if you don’t want. 
  • You can fry paneer in the same ghee if you want for Navaratan korma.
  • .You can use raw peanuts in place of cashew nuts. Make sure you peel them after soaking in Navaratan korma.
  • You can use milk powder in place of khava or completely skip it in korma.
  • Adding khava is optional. You can skip it if you don’t want in korma.
  • Adding sugar in korma is optional. You can skip it if you don’t want.
  • Adding khava in kheer is optional. You can skip it if you don’t want.
  • Adding saffron in kheer is optional. You can skip it if you don’t want.
  • You can use garam masala in place of kitchen king masala in masala pulav.
