Malvan special Traditional Shirvale

Shirvale is a traditional Malvan special recipe. Coconut milk is called naralacha ras for this recipe. This is a regular breakfast recipe in most Konkani homes. These are steamed rice noodles soaked in coconut milk flavored with jaggery and cardamom powder!! The method may vary. Please share your version if it varies from mine!! It looks nice and tastes just awesome. Rice noodles are nice and soft and taste best with naralacha ras. You can try this recipe at home and drop a comment for me.

Shirvale is one such recipe that is made from rice flour and serve with coconut milk. Though time consuming, as the final result is delicious, so it is worth a try!! This is a very easy recipe that is made with very basic ingredients those are readily available in your pantry. We already have seen lot many Malvan special / Konkani recipes. Ingredients

Shirvale

  • 1 1/2 cup Water
  • Alum
  • Salt to taste
  • 1 tsp Ghee
  • 1 cup Rice flour

Naralacha Ras

  • 1 cup Coconut milk
  • Jaggery / Gudh
  • 1 tsp Cumin powder
  • Saffron syrup
  • Cardamom powder
  • A pinch of Salt

Instructions

Shirvale

Step 1: Heat up water on medium heat and make 3-4 rounds of alum in water. This helps to make shirwale white.

Step 2: Add ghee, salt and mix well.

Step 3: When water begins to boil, add rice flour and mix in quickly.

Step 4: Turn off the gas. Cover and steam ukad for about 4-5 minutes.

Step 5: Take ukad out in a bowl and knead it really good. 

Step 6: Knead the ukad when it is still hot.

Step 7: When ukad turns nice and smooth, make a roll from it.

Step 8: Grease the roll and chakali mold well with ghee and transfer the ukad into chakali mold.

Step 9: Roll out shevaya or shirvale on a banana leaf. Grease the banana leaf also well with ghee.

Step 10: Steam the shirvale on medium heat for about 7-8 minutes.

Step 11: Take the shirvale out into a dish and add naralacha ras on it. Shirvale are ready.

Naralacha Ras

Step 12: Mix coconut milk, jaggery, cumin powder, saffron syrup well together.

Step 13: Add cardamom powder, salt and mix well.

Step 14: Stir well until gudh dissolves and naralacha ras is ready.

Notes

  • If needed you can use a little water while kneading the ukad.
  • You can Roll out shirvale into idly molds in place of banana leaf.
  • You can use turmeric powder in place of saffron syrup.
  • You can blend cumin seeds along with coconut when you make coconut milk. In that case don’t add cumin powder.
