It never so happens that you can make idly whenever you want. So here I am to help you out with instant idly recipe in which all these steps are skipped!! Also we are making quick sambar in cooker. Ingredients

Chutney

  • 1/4 cup roasted Chana dal
  • 1 cup grated fresh Coconut
  • 2 chopped Green chilies
  • 1 Garlic clove (Optional)
  • Salt to taste
  • Sugar to taste
  • Water as needed
  • 2 tbsp Oil
  • 1 tsp Mustard seeds
  • 1 tsp Cumin seeds
  • A pinch of Hing
  • 1 tsp Urad dal (Optional)
  • Curry leaves
  • Dry Red chilies

Idly

  • 1 cup thick Poha / Flattened Rice
  • 1 1/2 cup coarse Rava / Semolina
  • Salt to taste
  • 1/2 cup Curd
  • 1 1/2 cup Water
  • 1 tsp Fruit salt
  • 1 tsp Water

Sambar

  • 1/2 cup Turdal
  • 2 tbsp Moong dal (Optional)
  • 1 1/2 cup Water
  • 1 tbsp Tamarind
  • 2 tsp Gudh
  • Water as needed
  • 2 tbsp Sambar masala
  • Few Fenugreek seeds (optional)
  • 1 tsp Red chili powder
  • 1 tsp Turmeric powder
  • Salt to taste
  • Water as needed
  • Chopped Brinjal
  • Chopped Pumpkin
  • Chopped Drumstick
  • Sliced Onion
  • Chopped Tomato

Idly chutney recipe

Instructions

Chutney

Step 1: Blend roasted chana dal into powder in blender and add fresh coconut, green chili, garlic, salt, sugar.

Step 2: Blend it together first. Avoid use of water now.

Step 3: Add water and blend it together into chutney.

Step 4: Transfer the chutney into a bowl.

Step 5: For tadka heat up oil in a tadka pan and add mustard seeds.

Step 6: When mustard seeds pop up add cumin seeds, hing and turn off the gas.

Step 7: Add urad dal, curry leaves, dry red chilies and mix well.

Step 8: Add half of this tadka into the chutney and mix well. Chutney is ready.

Idly

Step 9: Blend poha into coarse powder in blender and transfer it into a bowl.

Step 10: Add rava, salt and mix well. 

Step 11: Add curd, water and mix everything well together.

Step 12: Cover and rest the batter for about 30 minutes.

Step 13: Add fruit salt and water and mix in quickly.

Step 14: Grease the idly mold well with oil.

Step 15: Add the batter into each idly mold and tap the idly mold well.

Step 16: Steam the idly on medium heat for about 7-8 minutes.

Step 17: Take the tray out and let it cool down for about 5 minutes.

Step 18: Take the idly out with the help of spoon or knife. Idly is ready.

Sambar

Step 19: Wash tur dal and moong dal well together 3-4 times and add water.

Step 20: Close the lid and cook dal on high heat for 5 minutes.

Step 21: Reduce the heat to low to medium and steam the dal for 10 minutes.

Step 22: Soak tamarind and gudh together in enough water for about 30 minutes.

Step 23: Beat the dal really good and add water as needed.

Step 24: Add sambar masala, fenugreek seeds, red chili powder, turmeric powder, salt and water and mix everything well together.

Step 25: Add the tamarind-gudh pulp, brinjal, pumpkin, drumstick, onion and tomato and mix well.

Step 26: You can add veggies of your choice. Close the lid and steam sambar on medium heat for 10 minutes.

Step 27: Open the lid and add the leftover tadka into the sambar and mix well.

Step 28: Simmer the sambar for just 2-3 minutes and sambar is ready.

Notes

  • Adding garlic in chutney is optional. You can skip it if you don’t want.
  • You can add coriander leaves in chutney if you want.
  • You can add water to adjust the consistency.
  • Adding urad dal is optional. You can skip it if you don’t want.
  • You can add water in idly batter to adjust the consistency.
  • Take care not to steam idly more than 10 minutes.
  • You can make around 14 idlies from the proportion we used.
  • You can cook dal on medium heat until 3-4 whistles.
  • Adding moong dal in sambar is optional. You can skip it if you don’t want.
  • You can cook sambar on medium heat until 1 whistle.
