Ashadhi Ekadashi special Upwas Thali

Upwas thali is made on the occasion of Ashadhi ekadashi. Today I am showing some new and different fasting recipes. I am trying to make the meal healthier and testier. I have also included a sweet recipe in the thali. We get bored of having the same fasting recipes. So here are few new additions to your fasting recipes. You can try it at your home.

In Maharashtra there is tradition of fasting on the 11th day of Marathi month Ashadh. People fast for 24 hours. So you need to come up with different and tasty fasting recipes. We already have seen lot many of them. Now I am trying to combine healthy and delicious recipes in a thali. Do you want to know more? Let’s start with the recipe…

Some Interesting facts about Ashadhi Ekadashi special Upwas Thali :-

This is a very special upwas thali. If you are fasting for 24 hours then you must have something healhy and tasty too!! This thali contains chips, a sweet dish, paneer sabzi, all time favorite sabudana khichadi, koshimbir, batata bhaji and ghavan too!! You don’t have to make all these recipes in a go. I have just incorporated them in one thali. You can make different recipes according to your choice.

Ingredients

Upwas Halwa

  • 1 tsp Ghee
  • 2 cups grated Pumpkin
  • Chopped Dry nuts
  • 1/2 cup grated Khoya / Mawa
  • 1/4 cup Sugar
  • Cardamom powder

Upwas Paneer Sabzi

  • 2 tsp Arrowroot powder
  • 2 tsp Red chili powder
  • Cumin powder
  • Salt to taste
  • Water
  • 3 tsp Groundnut oil
  • Cinnamon stick
  • Green Cardamom
  • Cloves
  • Black peppercorns
  • Water
  • 200 gm Paneer cubes
  • Finely chopped Coriander leaves

Raw Banana Chips

  • 2 raw Banana
  • Salt
  • 1 tsp Red chili powder
  • Salt to taste
  • Finely chopped Coriander leaves (Optional)
  • Varai rava
  • Ghee for shallow frying

Sabudana Khichadi

  • 1 tsp Ghee
  • 1/2 tsp Cumin seeds
  • Chopped green chilies
  • Boiled and peeled Potato
  • Soaked Sabudana
  • Roasted Peanut powder
  • Salt to taste
  • Finely chopped Coriander leaves

Upwas Batata Bhaji

  • 1 tsp Ghee
  • 1/2 tsp Cumin seeds
  • 1 tsp green chili-Ginger paste
  • Boiled, peeled and chopped Potato
  • Roasted peanut powder
  • Salt to taste
  • Finely chopped Coriander leaves (Optional)

Upwas Koshimbir

  • 1/2 cup Curd
  • Salt to taste
  • 1/2 tsp Green chili paste
  • Sugar to taste
  • Grated Cucumber
  • Finely chopped Coriander leaves (Optional)
  • Roasted Peanut powder

Upwas Ghavan

  • Rajgira flour
  • 1/2 tsp Cumin seeds
  • 1 tsp Green chili-Ginger paste
  • Salt to taste
  • Finely chopped Coriander leaves (Optional)
  • Water
  • Ghee

Upasachi thali

Instructions

Upwas halwa

Step 1: Heat up ghee in a pan and add pumpkin, dry nuts.

Step 2: Fry well for about 3-4 minutes and cover and cook for about 5 minutes.

Step 3: Add khava, sugar and fry together for another 7-8 minutes.

Step 4: Add cardamom powder and mix well.

Step 5: Turn off the gas and upwas halwa is all ready.

Upwas Paneer Sabzi

Step 6: Take arrowroot powder in a bowl and add red chili powder, cumin powder, salt.

Step 7: Mix well and add water to make slurry.

Step 8: Heat up oil in a pan and add cinnamon, cardamom, cloves, black peppercorns.

Step 9: Fry it for few seconds and add the slurry, water.

Step 10: Cook it well and add paneer, coriander leaves.

Step 11: Cook well for about 3-4 minutes and paneer sabzi is all ready.

Raw Banana Chips

Step 12: Cut off the stem part of raw banana and peel it. Cut it into thin slices.

Step 13: Add salt in water and soak the slices in water for about 10 minutes.

Step 14: Take the slices out on a napkin and dry them well.

Step 15: Sprinkle red chili powder, salt, coriander leaves and coat the slices well.

Step 16: Blend varai in mixer and add the rava into the slices.

Step 17: Heat up ghee in a pan and drop the slices into it for shallow frying.

Step 18: When one side is fried well flip the slices over and fry well from other side too.

Step 19: When the chips are fried well from both sides take them out, drain excess ghee and transfer into a dish.

Sabudana Khichadi

Step 20: Heat up ghee in a pan and add cumin seeds.

Step 21: When cumin seeds splutter add green chilies and fry well.

Step 22: Add potato, soaked sabudana, roasted peanut powder, salt and fry well for about 4-5 minutes.

Step 23: Add coriander leaves and mix well. Sabudana khichadi is all ready.

Upwas Batata Bhaji

Step 24: Heat up ghee in a pan and add cumin seeds.

Step 25: When cumin seeds splutter add green chilli-ginger paste and fry for about a minute.

Step 26: Add potato, roasted peanut powder, salt and fry for about 4-5 minutes.

Step 27: Add coriander leaves and upwas batata bhaji is all ready.

Upwas Koshimbir

Step 28: Take curd in a bowl and salt, green chili paste, sugar. Mix everything well together.

Step 29: Add cucumber, coriander leaves, roasted peanut powder and mix well. Upwasachi koshimbir is all ready.

Upwas Ghavan

Step 30: Take rajgira flour in a bowl and add cumin seeds, green chili-ginger paste, salt, coriander leaves, water.

Step 31: Mix well to make medium consistency batter.

Step 32: Heat up a pan on medium heat and grease it with ghee.

Step 33: Start making batter from the edges of the pan and end up at the center.

Step 34: When lower side is roasted well flip the ghavan over and roast well from other side too.

Step 35: When ghavan is roasted well from both sides take it off on a jail or cooling rack.

Upwasachi thali

Notes

  • Adding coriander leaves is optional. You can skip it if you don’t want.
  • You can use sabudana flour in place of varai rava in kaap.
  • In all above recipes if you don't have whole spices or coriander leaves then you can skip it.
