Ingredients

  • 1 tbsp Oil
  • 1 tsp Cumin seeds
  • 3~4 Bay leaves
  • Cinnamon stick
  • 1 Star anise
  • Few Cloves
  • Few Cardamoms
  • 1 finely chopped Onion
  • 1 tbsp Ginger-garlic paste
  • 2 green chilies chopped
  • Finely chopped Green beans,
  • Carrot chopped
  • Chopped Potato
  • Green peas
  • 1 cup washed and soaked basmati rice
  • 1 1/2 cup Water
  • A few Raisins and Cashew nuts
  • Salt to taste
  • 1 tsp Ghee (Optional)

Instructions

  • Heat up oil in a pressure cooker.
  • When the oil is hot enough, add cumin seeds, bay leaves, cinnamon stick, star anise, cloves, and cardamom.
  • Fry the khada masala just for 30-40 seconds until they release their flavors.
  • Add onion and fry for about 3-4 minutes until it turns just soft. No need to change its color.
  • Add ginger-garlic paste and chopped green chilies. Fry for about a minute.
  • Add finely chopped green beans, carrot, potato, and green peas. You can add veggies of your choice.
  • Mix well and fry the veggies for a minute.
  • Take 1 cup long-grain basmati rice, wash it really good with water. Soak it in enough water for 30 minutes.
  • Drain all the water and add it. Mix the rice well with veggies.
  • Add water, raisins and cashew nuts, salt to taste. Mix again well.
  • Add ghee (Optional). But ghee gives a nice taste and glaze to rice.
  • Close the lid and cook on medium heat until 2 whistles.
  • Open the lid and loosen up the rice with a fork. Vegetable pulav is already.
  • This pulav goes well as it is.
  • It also goes well with any little hot raita.
