Kheer is a traditional recipe. You can call this as rice pudding. Kheer is made in all parts of India and is known by different names. The basic ingredient is milk. Kheer is made using broken wheat, vermicelli, rava, different dal, sabudabna too. At some places gudh is used to give sweet taste.

Ingredients

For Kheer Base

  • 1 1/2 liter Govind cow milk
  • 1/2 cup Rice kani
  • 2 tsp Govind cow Ghee

For Shahi Kheer

  • 2 tsp Sugar
  • Sliced Almonds
  • Chopped Cashew nuts
  • Chopped Pistachios
  • Few saffron strands
  • Cardamom powder
  • 1 tsp Gulkand
  • Rose syrup

For Chocolate Kheer

  • Unsweetened Cocoa powder
  • 2 tsp Chocolate syrup
  • 2~3 tsp Sugar
  • Choco chips

For Paan flavor Kheer

  • 1 tsp Fennel seeds
  • 1 tsp Gulkand
  • Cardamom powder
  • Few Almonds
  • 2 Betel leaves
  • Khus syrup
  • Tutti frutti

 

Quick delicious 4 types kheer

Instructions

For Kheer Base

Step 1: Heat up Govind cow milk in a pan and bring it to boil.

Step 2: Wash rice kani really good 3-4 times and drain all the water from it.

Step 3: When milk boils well add washed rice and mix well.

Step 4: Cook kheer on low to medium heat until rice is cooked well for about 15-20 minutes.

Step 5: Keep on stirring kheer at the regular intervals so that rice won’t stick to the base of the pan.

Step 6: When rice is cooked well, add govind cow ghee and mix well.

Step 7: Cook the kheer for another 2-3 minutes. Kheer base is ready.

For Shahi Kheer

Step 1: Transfer 3/4 kheer base into a bowl and in the remaining 1/4 kheer base add sugar, almonds, cashew nuts, pistachios, saffron, cardamom powder and mix well. 

Step 2: Cook everything well together for about 5-7 minutes.

Step 3: Shahi kheer is all ready. Garnish with almond slices, pistachios slices.

For Rose flavor Kheer 

Step 1: Take another 1/4 kheer base and add gulkand, rose syrup.

Step 2: Mix well and cook for another 2-3 minutes.

Step 3: Rose flevar kheer is all ready. 

For Chocolate Kheer 

Step 1: Take another 1/4 kheer base and add unsweetened cocoa powder, chocolate syrup, sugar.

Step 2: Mix well and cook for another 2-3 minutes.

Step 3: Chocolate kheer is all ready. Garnish with choco chips.

For Paan flavor kheer 

Step 1: For making paan msala take fennel seeds, gulkand, cardamom powder, almonds, betel leaves in a blender jar and blend into coarse paste.

Step 2: Paan masala is ready.

Step 3: In the remaining kheer base add the paan masala, khus syrup, tutti frutti and mix well.

Step 4: Cook everything well together for another 4-5 minutes.

Step 5: Paan kheer is all ready. Garnish with tutti frutti.

 

 

 

Notes

  • You can use full cream or full fat or buffalo milk in place of Govind cow milk.
