Ingredients

  • 1 1/2 liter Whole milk
  • 1/2 cup Sugar
  • Cardamom powder to taste
  • Dry fruits

Instructions

  • In a pan take the milk and heat it on medium heat.
  • When the cream begins to gather, stir well.
  • Mix the cream well with milk.
  • Repeat this procedure until milk is reduced to half of its quantity.
  • When milk reduces to half, add sugar, and mix well.
  • You can decide the quantity of sugar as per your taste.
  • Cook for another 15 minutes.
  • Turn off the gas and add cardamom powder.
  • Mix well and basundi is already.
  • Though basundi looks a bit thin when hot, it will thicken up as it cools down.
  • You can garnish basundi with dry fruits or saffron too as per your taste.
  • You can serve basundi hot or cold too.
  • Basundi goes well with poori.

Notes

  • Try to use the wide and broad vessel for boiling milk. This will help in quick evaporation of milk and also it won’t spill out.
  • Shortcut method for making Basundi
  1. You can add bread crumbs so that milk will thicken up quickly.
  2. Roast khoya well and add it to boiling milk. Add sugar and boil again. Quick basundi is already. 125 gm khoya is enough for 1/2 liter milk.
  3. You can add milk powder too. 1 cup milk powder in enough for 1/2 liter milk. If you use milk powder and condensed milk together, milk will thicken up more quickly.
  • Reduce milk on medium heat only. If you boil milk on high heat, there is a possibility of spilling the milk out of the vessel.
  • If you use a deep vessels, lots of steam is gathered and the possibility of milk spilling out of the vessel increases. So try to use a broad vessel.
