Ingredients

  • 1/2 cup + 2 tsp powdered Sugar
  • 1/4 cup Milk powder
  • 1/4 cup Corn flour
  • 1/4 cup G.M.S. powder
  • 1 tbsp C.M.C. powder

Quick ice cream premix

Instructions

Step 1: Take powdered sugar in a bowl and add milk powder, corn flour, G.M.S powder, C.M.C. powder.

Step 2: Mix everything well together and strain the mixture into a bowl. Ice cream premix is all ready.

Step 3: For making ice cream using this premix heat up the milk and bring it to boil. Keep 1/2 cup cold milk aside.

Step 4: Mix 1/2 cup ice cream premix into 1/2 cup cold milk and add this mixture into boiling milk. Mix in quickly.

Step 5: Avoid use of hot milk as lumps of corn flour will be formed due to hot milk. 

Step 6: Turn off the gas and let the mixture cool down completely.

Step 7: Transfer the mixture into a plastic jar or a deep container and transfer it into deep freezer to set for about 6 hours.

Step 8: Once the mixture is set the ice cream base is ready.

Notes

  • G.M.S powder is a good emulsifier and it gives thickness.
  • C.M.C. powder stops crystallization of ice cream.
  • You can store the premix in an airtight container for about a month. Store it at room temperature and not in freeze.
  • Avoid setting ice cream base in freezer more than 6 hours.
