Ingredients

  • Quick sakhar amba4 raw Mangoes
  • 1 tsp Ghee
  • 3~4 Cloves
  • Cinnamon
  • 1 1/2 cup Sugar
  • Few Saffron strands (Optional)

 

Instructions

Step 1: Wash and peel the raw mangoes.

Step 2: Grate the raw mangoes into long shreds.

Step 3: Heat up a pan on medium heat and add ghee.

Step 4: When the ghee is hot enough add cloves, cinnamon and fry for few seconds.

Step 5: Add grated mango and fry for about 3-4 minutes.

Step 6: Add sugar and mix well.

Step 7: Cook everything together until the mixture thickens up a little for about 10-15 minutes.

Step 8: After cooking for about 7-8 minutes add saffron and mix well.

Step 9: When the mixture thickens up a little and gets nice glaze turn off the gas.

Step 10: Let the sakhar amba cool down completely and sakhar amba is all ready.

Step 11: You can store the sakhar amba in an airtight glass jar for about a year.

Notes

  • You can skip peeling the mango if you want.
  • The proportion of sugar should be half of the grated mango.
  • You can decide the quantity of sugar depending on your taste.
  • Adding saffron is optional. You can skip it if you don’t want.
  • You can cook the sakhar amba a little longer after it gets nice glaze if you want.
  • You can store it at room temperature. No need to store it in freeze.
