Ingredients

  • 3 Alphanso mangoes
  • 1/4 cup Sugar
  • 1/4 tsp Cardamom powder
  • Ghee

Instructions

  • Wash mangoes really good and peel them.
  • Chop the mangoes into small pieces.
  • Transfer these pieces into blender jar and blend into fine puree or pulp.
  • No need to add any water while blending the mangoes.
  • Heat up a pan on medium heat.
  • Transfer the mango puree into the pan.
  • Add sugar and mix well.
  • You can use gudh in place of sugar.
  • Cook the mixture on medium heat for about 4-5 minutes.
  • Stir continuously while cooking the mixture.
  • Do not overcook the mixture. The color of the mixture should not change.
  • Turn off the gas and add cardamom powder.
  • Mix well and let the mixture cool down.
  • You can use nut meg too.
  • Grease a dish well with ghee.
  • Transfer the mixture into the dish and tap it well so as to spread it evenly.
  • Dry the amba poli under hot sun for about 2 days.
  • You can dry it under fan if you don’t have enough sun light.
  • You can dry this amba poli in over at 180 Deg F for about 4-5 hours.
  • When amba poli dries well loosen the edges with the help of a knife and take it off the dish.
  • Cut the amba poli into pieces with the help of knife and amba poli is already.
