Veg Pot Biryani

This is Hyderabad special biryani recipe with few variations. Here we will be making tiffin biryani means you don’t need to cook rice and veggies separately. You don’t need to marinate the veggies separately. This can be made in a pot or kadhai hence the name. This can be one dish meal after a long tiring day. This is very easy, simple and quick recipe. You can try this recipe at home.

This is Hyderabad special recipe. Generally while making any biryani there are lot many steps involved like marination, cooking rice, making masala, layering biryani etc. But today we will skip all these steps and make a quick biryani that will taste exactly like dum biryani.

Ingredients

  • A little more than 1/2 cup Curd
  • 1 tsp Dabur homemade Ginger-Garlic paste
  • 4~5 Black peppercorns
  • 3~4 Cloves
  • Cinnamon sticks
  • 1~2 green Cardamom
  • 1 tsp Coriander powder
  • 1 tsp Red chili powder
  • 1/2 tsp Biryani masala
  • 1/4 tsp Turmeric powder
  • Slit Green chilies
  • Finely chopped Coriander leaves
  • Mint leaves
  • 1/4 cup fresh Peas
  • 1/4 cup chopped French beans
  • Sliced Carrot
  • Cauliflower florets
  • 1 1/5 cup Rice
  • 3 cups water
  • Salt to taste
  • Chopped Cashew nuts (Optional)
  • 1 tsp Ghee (Optional)

Instructions

Step 1: In a kadhai take curd, Dabur homemade ginger-garlic paste, black peppercorns, cloves, cinnamon, green cardamom, coriander powder, red chili powder, biryani masala, turmeric powder, green chilies and mix everything well together.

Step 2: Add coriander leaves, mint leaves and mix well.

Step 3: Add fresh peas, French beans, carrot, cauliflower florets and mix everything well together.

Step 4: Wash rice really good 2-3 times with water and drain all the water from it.

Step 5: Transfer the rice into veggies mixture and add water.

Step 6: Add salt, cashew nuts and mix well.

Step 7: Add ghee and mix well.

Step 8: Cover the kadhai with a lid and turn on the gas.

Step 9: Bring the mixture to boil on high heat.

Step 10: Turn the gas on medium heat and cook until all the water is soaked into rice.

Step 11: Turn the gas on lowest possible setting and cook the biryani for about 20 minutes.

Step 12:Turn off the gas and let the biryani be as it is for another 10 minutes.

Step 13: Remove the lid and mix biryani once carefully.

Step 14: Pot biryani is all ready.

Step 15:You can have it as it is or with raita.

 

 

Notes

  • Adding cashew nuts and ghee is optional. You can skip it if you don’t want.

Servings

You can serve this biryani with papad, pickle or raita, curd. It tastes fantastic and is very easy to make. This biryani can be a one pot meal for if you don’t have time to cook chapati sabzi or are bored of having pulav or khichadi.
