There are lot many summer special recipes like papad, kurdai, sandge, sabudana papdya, chikvadya etc. Every Maharashtrian house hold makes some or other summer special recipes. These are stored for a year. In these recipes making kurdai is one of the toughest recipe. It is tiring and time consuming too. Though kurdai tastes nice, it is really long process. But today we have skipped all these steps and making light and nice kurdai. Shall we start?

Making kurdai is time consuming and tiring job. You have to soak rava or wheat for 3 days, then blend it, then let it set. Taking the precipitate out and cooking it to make chik. You can make kurdai from this chik. Kurdai tastes just awesome on frying. But in this recipe we have skipped all these steps and made it very easy and simple recipe. It puffs up perfectly same as the traditional kurdai.

Ingredients

  • 1 cup fine Suji
  • 2 cups Water
  • 1/2 tsp Salt
  • 1/4 tsp Papad khar

Instructions

Step 1: Add water in rava and rest it for about 5 minutes.

Step 2: Pour out all the water from rava.

Step 3: Repeat the procedure twice and transfer the rava into a pan.

Step 4: Add water, salt, papad khar and cook everything together really good.

Step 5: Keep on stirring the mixture continuously or lumps of rava will be formed.

Step 6: Cook the mixture well until it comes together like dough for about 10 minutes.

Step 7: The mixture should be a little soft and not too stiff.

Step 8: As the time passes the mixture will thicken up.

Step 9: Turn the heat to lowest possible setting, cover and steam the mixture for about 5-7 minutes.

Step 10: Turn off the gas and mix it well once.

Step 11: Grease the kurdai mold well with oil and add the rava mixture into it.

Step 12: Close the lid and roll out kurdai on a plastic sheet.

Step 13: Dry the kurdai well from both sides.

Step 14: After drying the kurdai for a day, when the kurdai is a little wet flip it over and dry the kurdai for 1 or 2 days from other side too.

Step 15: Rava kurdai is all ready.

Notes

  • You can make around 30 medium size kurdai from 1 cup fine rava.
  • You can store these kurdai in an airtight container for about a year.
