Ingredients

Ragda

  • 1 cup soaked white Peas
  • 1/4 tsp Turmeric powder
  • 2 slit Green chilies
  • Water as needed
  • Salt to taste

Patties

  • 4 boiled, peeled and mashed Potatoes
  • 3~4 finely chopped Green chilies
  • 1” grated Ginger
  • 1/4 tsp Turmeric powder
  • Salt to taste
  • Finely chopped Coriander leaves
  • 1/2 Lemon juice
  • 1 tbsp Corn flour
  • Oil for shallow frying

Serving

  • Tamarind-Jaggery chutney
  • Pudina Chutney
  • Shev
  • Finely chopped Onion
  • Masala Boondi

Street style ragda patties

Instructions

Ragda

Step 1: Add soaked white peas in a cooker and add turmeric powder, green chilies and water.

Step 2: Close the lid and cook on medium heat until 5-6 whistles.

Step 3: Open the lid and add salt.

Step 4: Turn the gas on and mash the ragda a little until it turns nice and homogenous.

Step 5: Simmer the ragda for few minutes and ragda is ready.

Patties

Step 6: Mix mashed potatoes, green chilies, ginger, turmeric powder, salt, coriander leaves, lemon juice and corn flour well together like dough.

Step 7: Take small portion from it and roll it into patties.

Step 8: Heat up oil in a pan and add patties into it.

Step 9: Shallow the patties well until it gets nice browning from both sides.

Step 10: When the patties is fried well from both sides, take it out, drain excess oil and transfer it into a dish. Patties is ready.

Serving

Step 11: Add ragda first in the serving dish and place patties in it.

Step 12: Spread pudina chutney, tamarind-jaggery chutney on it. Garnish with onion, shev and masala boondi.

Notes

  • You can use chat masala in place of lemon juice.
  • You can decide the size and shape of the patties
