Healthy Hulgyache Dhirde

Hulgyache Dhirde (Kulith Ghavan) is a rustic Maharashtrian savory crepe made using horse gram flour (kulith or hulga). Tempered with garlic, green chillies, cumin, and fresh coriander, this net-like crepe is light, crispy, and exceptionally nutritious. It provides a wholesome, high-protein breakfast option that prepares quickly without overnight fermentation.

Chilly winter mornings in traditional Maharashtrian households often began with the cozy aroma of garlic and spiced batter sizzling on a heavy iron skillet. Grandmothers frequently prepared warm Kulith crepes to keep the family energized and protected against cold weather. Paired with a dollop of fresh homemade butter or spicy garlic chutney, every bite brings back comforting memories of rustic village kitchens.
