Ingredients

  • Kothimbir Pulao
    โ€ข 4 tbsp Roasted chana dal
    โ€ข 8~10 Garlic cloves
    โ€ข 2 Green chillies
    โ€ข 1/2 inch Ginger pieces
    โ€ข 1 cup Fresh coriander
    โ€ข 1/2 tsp Black salt
    โ€ข 1/2 tsp Chaat masala
    โ€ข 3~4 Ice cubes
    โ€ข 1 tbsp Ghee
    โ€ข 8~10 Cashews
    โ€ข 2 tbsp Fried onions
    โ€ข 1/2 tsp Cumin seeds
    โ€ข 1/2 inch Cinnamon
    โ€ข 4~5 Black peppercorns
    โ€ข 2~3 Cloves
    โ€ข 1 Bay leaf
    โ€ข 1/2 tsp Coriander-cumin powder
    โ€ข Salt to taste
    โ€ข 2 cups Cooked Basmati rice

  • Narali Bhat
    โ€ข 3 tbsp Ghee
    โ€ข 1/2 inch Cinnamon
    โ€ข 2 Green cardamoms
    โ€ข 4~5 Cloves
    โ€ข 1 cup Freshly grated coconut
    โ€ข 1/2 cup Sugar
    โ€ข 8~10 Mixed dry fruits
    โ€ข 3 cups Cooked rice
    โ€ข 2 tbsp Saffron water
    โ€ข 1/2 tsp Cardamom powder

  • Kaju Masala
    โ€ข 1 tbsp Oil
    โ€ข 4 Onions
    โ€ข Pinch of Salt
    โ€ข 2 Tomatoes
    โ€ข 5~6 Cashews
    โ€ข 2 tbsp Oil
    โ€ข 8~10 Cashews
    โ€ข 1 tbsp Ginger-garlic paste
    โ€ข 1 tsp Kitchen King masala
    โ€ข 1.5 tsp Coriander powder
    โ€ข 2 tsp Byadgi red chilli powder
    โ€ข Salt to taste
    โ€ข 1 cup Hot water
    โ€ข 1 tbsp Butter
    โ€ข 1 tbsp Kasuri methi

  • Kobi Bhaji
    โ€ข 1.5 cups Cabbage
    โ€ข 2 tbsp Fresh coriander
    โ€ข 2 Green chillies
    โ€ข Salt to taste
    โ€ข 1 cup Gram flour
    โ€ข 2 tbsp Rice flour
    โ€ข Pinch of Turmeric powder
    โ€ข Pinch of Baking soda
    โ€ข 1/2 tsp Red chilli powder
    โ€ข 1/2 tsp Carom seeds
    โ€ข Oil for frying

Instructions

Kothimbir Pulao
โ€‹Step 1: Grind roasted chana dal, garlic cloves, green chillies, ginger pieces, fresh coriander, black salt, chaat masala, and ice cubes in a mixer jar into a smooth green paste.
โ€‹Step 2: Heat ghee in a pan, fry cashews until golden brown, set aside, then fry sliced onions until crispy and set aside.
โ€‹Step 3: Add cumin seeds, cinnamon, black peppercorns, cloves, bay leaf, and coriander-cumin powder to the remaining ghee, turn off the heat, stir in the green paste and salt, then sautรฉ until the raw smell disappears.
โ€‹Step 4: Add cooked Basmati rice to the pan, gently mix with the green chutney paste until uniform, and top with fried cashews and crispy fried onions.

โ€‹Narali Bhat
โ€‹Step 1: Heat ghee in a pan and add cinnamon, green cardamoms, and cloves for tempering.
โ€‹Step 2: Add freshly grated coconut to the pan, sautรฉ briefly, add sugar, and stir continuously until the sugar melts completely into the coconut.
โ€‹Step 3: Add mixed dry fruits, cooked rice, saffron water, and cardamom powder to the coconut mixture, tossing gently until the rice absorbs the flavors and turns juicy.

โ€‹Kaju Masala
โ€‹Step 1: Heat oil in a pan, sautรฉ sliced onions with a pinch of salt until golden brown, add tomatoes and cashews, cook until tomatoes soften, cool completely, and blend into a smooth paste without adding water.
โ€‹Step 2: Shallow-fry cashews in oil until golden brown, set aside, then add the prepared onion-tomato paste and ginger-garlic paste to the same pan and sautรฉ for five minutes until water evaporates.
โ€‹Step 3: Add Kitchen King masala, coriander powder, Byadgi red chilli powder, salt, hot water, butter, and crushed kasuri methi, then simmer until oil floats on top.
โ€‹Step 4: Add fried cashews into the simmering gravy, stir well, and switch off the heat.

โ€‹Kobi Bhaji
โ€‹Step 1: Shred cabbage finely using a slicer, combine with fresh coriander, sliced green chillies, and salt in a bowl, and rest for ten minutes to release natural moisture.
โ€‹Step 2: Add gram flour, rice flour, turmeric powder, baking soda, red chilli powder, and carom seeds to the cabbage mixture, mixing thoroughly using only the released moisture to form a thick batter.
โ€‹Step 3: Shape the mixture into small, hollow round balls, drop into hot oil, and deep-fry on medium heat until golden and crispy.

Notes

  • Drizzle warm ghee over the fragrant narali bhat right before serving.
  • Garnish the rich kaju masala with chopped coriander leaves and a sprinkle of crushed kasuri methi.
