​Mawa cake originated within Mumbai’s historic Irani cafes during the twentieth century as a unique fusion of Persian baking with Indian dairy traditions. Evaporated milk solids provide incredible richness without needing heavy frostings or artificial flavorings. Using pure ghee instead of oil gives this classic delicacy its signature soft crumb and traditional festive taste.

Ingredients

  • ​1/2 cup Sugar
  • 1/2 cup Curd
  • ​1/4 cup Fine semolina
  • ​1/2 cup Mawa
  • ​4 tbsp Milk powder
  • ​1/4 cup Ghee
  • ​1/2 cup Milk
  • ​2 cup All purpose flour
  • ​2 tsp Baking powder
  • ​1/2 tsp Cardamom powder
  • ​1/4 tsp Turmeric powder

Instructions

Step 1. Take sugar, curd, fine semolina, mawa, milk powder, ghee, and milk in a mixer jar.
Step 2. Blend all these ingredients until smooth and creamy.
Step 3. Pour the blended mixture into a large bowl.
Step 4. Sift all purpose flour, baking powder, cardamom powder, and turmeric powder directly into the bowl over the wet mixture.
Step 5. Mix everything well using a whisk until smooth and free of lumps.
Step 6. Line an 8x8 inch baking tin with butter paper.
Step 7. Pour the cake batter into the prepared tin and tap it gently to remove air bubbles.
Step 8. Preheat oven at 180°C for 5 minutes.
Step 9. Bake the cake at 180°C for 45 to 50 minutes on the middle rack until a toothpick inserted comes out clean.
Step 10. Remove the cake from the oven and let it cool in the tin for 30 minutes.
Step 11. Run a knife along the edges, invert to demold, remove the butter paper, and cut into slices.

Notes

  • You can add tutti frutti as per choice.
  •  This is a great alternative for tiffin recipes.
