Gulkand Rose Ukadiche Modak is a modern, aromatic twist on the traditional Maharashtrian festive delicacy. Ingredients

  • 1 tbsp Clarified butter
  • ​1/4 cup Dry fruits
  • ​1 cup Fresh grated coconut
  • ​1/2 cup Gulkand
  • ​1.1/2 cup Water
  • ​1 pinch Salt ​
  • 4 tbsp Rose syrup
  • ​1 cup Semolina
  • ​2 tbsp Rice flour

Instructions

Step 1: ​Heat 1 tbsp Clarified butter in a pan and lightly roast 1/4 cup Dry fruits.

Step 2: ​Add 1 cup Fresh grated coconut to the pan and roast on low flame for 5 minutes without changing its color.

Step 3: ​Add 1/2 cup Gulkand into the coconut mixture, mix well, and cook for 5 minutes before turning off the heat to let it cool.

Step 4:  ​Boil 1.5 cup Water in a separate pan and mix in 1 tbsp Clarified butter, 1 pinch Salt, and 4 tbsp Rose syrup.

Step 5: ​Turn the heat to low, add 1 cup Semolina gradually while stirring continuously to prevent lump formation.

Step 6:  ​Turn off the gas, mix the semolina dough completely until uniform in color, and let it cool down slightly.

Step 7:  ​Knead the warm dough lightly to make it smooth and form a small dough ball.

Step 8: Dust hands with 2 tbsp Rice flour, flatten the dough ball into a small disc, and press the edges to form delicate pleats.

Step 9:  ​Place a spoonful of the gulkand mixture in the center and gently seal the top to form a modak.

Step 10: ​Place the shaped modaks on a steamer plate over rapidly boiling water.

Step 11: Steam the modaks with a lid on for exactly 10 minutes, then turn off the heat and serve warm.

Notes

  • Pour hot A2 ghee over the steamed modaks, then top them with slivered pistachios and dried rose petals.
  • Serve warm on a fresh banana leaf alongside traditional festive meals or during Ganpati Naivedya offerings.
