Ingredients

  • 1/2 cup Idly rava
  • 1 cup Mango pulp
  • 1/2 cup Sugar
  • 1/2 cup Coconut milk
  • 1/2 cup shredded fresh Coconut
  • 1/2 tsp Eno fruit salt (Optional)
  • 1 tsp Water

Instructions

  • Take idly rava into a bowl.
  • You can use homemade tandalacha rava in place of idly rava.
  • Add mango pulp, sugar, coconut milk, shredded fresh coconut and mix everything well together.
  • You can decide the quantity of sugar according to your taste.
  • You can use regular milk or water in place of coconut milk.
  • Cover and rest the mixture for about 30 minutes.
  • Add eno, water and mix well.
  • You can skip adding eno.
  • But it helps to make sandan light and fluffy.
  • You can add 1/4 tsp baking soda or baking powder in place of eno.
  • Line up a cake tin with was paper.
  • Wax paper is optional. You can skip it if you don’t have.
  • Pour out the mixture into the tin and spread it evenly.
  • Heat up about 2” water at the base of the steamer.
  • Place another steamer pot above it and place the cake tin in it.
  • Steam the sandan on medium heat for about 15-20 minutes.
  • Let the sandan be in the steamer for another 5 minutes after switching off the gas.
  • Let it cool down completely at room temperature.
  • Check with a tooth pick. If it comes out clean, it means the sandan id perfected cooked.
  • Loosen the edges with a knife. Put a plate on the tin and flip it over.
  • Remove the tin and ambyache sandan is all ready.
  • Cut it into pieces and serve.
  • You can add cardamom powder or nutmeg powder if you want for flavour.
