Pineapple Sheera is a classic Maharashtrian sweet dish made from roasted semolina (rava), pure ghee, and fresh pineapple chunks. Simmering sweet pineapple in sugar syrup before adding it to hot roasted rava creates a juicy, restaurant-style grain texture. This fragrant dessert is popular at traditional Maharashtrian weddings, pujas, and festive celebrations.

Attending Maharashtrian wedding functions in childhood always meant eagerly waiting for the sweet line-up. Finding tropical pineapple chunks tucked inside soft, warm ghee sheera was the ultimate highlight of the meal.

Ingredients

  • 3 tbsp Ghee ​
  • 1/2 cup Fine semolina ​
  • Cashew and almond pieces
  • ​2 cups Hot water ​
  • 1 cup Pineapple syrup

Instructions

Step 1 :- Heat ghee in a pan on medium flame.

Step 2 :- Add fine semolina to the pan.

Step 3 :- Roast the fine semolina on low flame for 5 to 7 minutes until slightly fragrant.

Step 4 :- Add cashew and almond pieces to the pan.

Step 5 :- Roast for another 2 to 3 minutes until light golden.

Step 6 :- Pour hot water into the roasted fine semolina mixture.

Step 7 :- Mix everything well to avoid lumps.

Step 8 :- Cover the pan with a lid and steam until the fine semolina absorbs all the water.

Step 9 :- Remove the lid and add pineapple syrup.

Step 10 :- Stir continuously until the pineapple syrup blends thoroughly with the cooked fine semolina.

Step 11 :- Add remaining ghee on top for a shiny glaze.

Step 12 :- Cover the pan and steam on low flame for 3 to 4 minutes.

Step 13 :- Turn off the heat and serve warm.

Notes

  • Grease a small round bowl with ghee, pack the sheera firmly, and flip onto a plate for a clean restaurant-style dome shape.
  • Serve warm for the best aroma and soft texture.
  • Pair with savory items like Upma, Sambar-Vada, or Thalipeeth to balance the sweetness.
