A healthy and delicious combination of rice with loads of vegetables. It makes a superb lunch or a Dinner recipe. Rice and dal cooked along with lots of variety of vegetables makes for an excellent healthy alternative. And of course which is tasty too!

Ingredients
- 3/4 cup Rice
- 1/4 cup Split Moong Dal
- 1/4 tsp Turmeric powder
- 1/4 tsp Hing
- 1 tsp Garam Masala
- 3 to 4 Bay Leafs
- 2 tbsp Sesame Seeds
- 1 tbsp Cumin Seeds
- 1 tbsp Ghee
- 1 tbsp Oil
- 1 tsp Mustard seeds
- 1 tsp Cumin seeds
- 2 tbsp Garlic
- 6 to 7 Curry leaves
- 4 to 5 dried Red Chillies
- 1/4 cup Potatoes diced
- 1/4 cup Cauliflower florets
- 1/4 cup Green Pepper diced
- 1/4 cup Corns
- 1/4 cup Green Peas
- 1/4 cup Carrots
- 3 to 4 slit green chilies
Instructions
- First put together bay leaf, sesame seeds, and cumin seeds into blender and powder it down.
- Mix rice and dal together, wash under cold water, and soak for 1 hour.
- Now put rice and dal mixture into the pressure cooker.
- To that add turmeric powder, hing, garam masala, and ground masala powder.
- Mix well.
- Now add all vegetables and green chilies.
- Add salt to taste.
- Cover and cook until you hear 2 to 3 whistles.
- After all the pressure goes down, open the lid of the pressure cooker, and give the rice a gentle mix.
- Now heat up ghee and oil together for a tempering.
- After that's hot, add mustard seeds, cumin seeds, garlic, and dried red chilies.
- Also, add curry leaves.
- Mix very well and let garlic change its color.
- Now pour the tempering over Khichdi and give that a good mix.
- Serve hot with a dollop of ghee on the top!
